Roasted Balsamic Chicken with Baby Tomatoes

I've made this a couple of times now; it makes for a great weeknight meal! I marinate the chicken breasts in the refrigerator for the duration of the day, and begin preheating the oven the moment I walk in the door. Simple and tasty!

Beet and Arugula Salad

I had never cooked with beets prior to making this salad, and although preparing them is labour-intensive, it is well worth the effort. When I first made this salad, I didn't bother reserving any of the lemon dressing, and simply tossed all of the dressing with all of the beets. The salad tasted quite "lemony", but very good. It was when I made a second salad the next day, using the "marinated" beets, that I absolutely feel in love with this recipe. The flavours, having had time to blend together, were absolutely wonderful. My friend who I served the salad to (Day #2 version) said it was "the best". This recipe is just excellent, I will be making it again very soon!

Sriracha-Lime Kale Chips

I had wanted to make another recipe from this site which only called for one cup of kale, and decided to use the rest of the huge bunch I had bought for this recipe. Definitely a great alternative to "regular" kale chips. Will be making again, for sure.

Chicken with Quinoa and Veggies

I have made this several times now, and it's become one of my favorite weeknight dishes. I don't tend to measure anything but the quinoa/chicken broth ratio, and it always turns out well. Most recently, I threw in some red pepper and a diced jalapeno in addition to the base recipe. Even my husband, who doesn't "believe" in healthy recipes, loves this one! A definite keeper!

Chef John's Pasta Primavera

I had been tempted by this recipe for quite a while, but had stayed away because of all the prep involved. I ended up making it recently, and while all the chopping did take a while, it was worth the effort. I made the recipe exactly as written, but really, I imagine that any combination of vegetables would work. I will definitely make this again!

Green Chile Frittata

I followed this recipe almost exactly, the only difference is that I used fresh rather than canned green chilies. (And I halved it, because it's just my husband and I at home!) It turned out beautifully! I was skeptical about using cottage cheese in a frittata, but it worked out well. I will definitely be making this recipe again!

Slow Cooker Buffalo Chicken Wing Soup

I made this today, and although I enjoyed it, I did feel as though it was lacking just a touch in flavour. When preparing the soup, I added about 30% more hot sauce than the recipe called for, and even then, I found it needed more post cooking. In addition to the carrots, celery and potatoes, I added onions. The recipe is right to say that the dish needs to be stired throughout the cooking time; I didn't stir mine throughout and came home to some veggies which were cooked just fine and some which were a bit undercooked. But that's not the recipe's fault! All in all a good dish, albeit not your healthiest option!

Easy Arugula Salad

This is one of my "go-to" salad recipes. It's super easy and tastes just great, I can't get enough! I usually end up omitting the avocado because I tend to put leftovers in the fridge for the following day and I don't like the texture of the avocado after it's been sitting exposed for a while, but I don't find that this particular omission takes away from the salad at all.

Slow Cooker Spaghetti Squash

I cook and eat spaghetti squash on a regular basis, and I was excited to stumble across this method of cooking it. Even though it was ridiculously easy to prepare, unfortunately I found that the squash came out tasting a bit funny. I cooked it according to instructions, but left it on warm for several more hours; perhaps that was the issue. (Usually not a problem with most slow cooker recipes.) I don't think I'll be making spaghetti squash this way again, I will stick to the oven.

Sesame Vegetable Stir-Fry

I found this to be a little bland, I ended up adding oyster sauce to give the dish more flavour. A healthy dish from a vegetable content standpoint, but the sodium level is high. (I'm assuming that the nutritional information below is based on using low sodium soy sauce, and even then it says that this recipe constitutes 50% of one's daily recommended instake! And that's before I added the oyster sauce!)

Gourmet Sweet Potato Classic

I'll be honest . . . I cooked and ate this on an evening when I ended up having one too many glasses of wine. As such, my association with the dish isn't a positive one, lol. That said, my husband LOVED it, he said more than once that the combination of pecans and sweet potatoes is a great one. I peeled and boiled the sweet potatoes, and put everything together in the morning in preparation for cooking it later that day. The boiling option in my opinion was much easier than baking the potatoes in order to mash them. I'm sure I'll be asked to make this one again!

Homemade Black Bean Veggie Burgers

I made these tonight, and they turned out so well that I helped myself to a second one despite that I was already full from "round one". I had a hard time mashing up the beans "manually", so I threw them into the food processor along with the onion, pepper and garlic once I had chopped them separately. The end consistency was quite smooth, and I became worried that I would be making some sort of black bean meatloaf instead because the mixture did not appear as though it would be amenable to being formed into patties. But once I added the bread crumbs (I added probably twice as much as the recipe calls for), the patties formed just fine. I grilled the burgers on our indoor grill, and served with the usual burger toppings. I am by no means vegetarian, but for health reasons am trying to eat less meat and incorporate more legumes into my diet. This recipe will definitely remain on my radar! Just awesome!

Portobello Mushroom Pasta

As with another reviewer, my own husband saw me making this dish and thought it was weird that it didn't have a "sauce". But despite that, we both found the dish to be quite flavourful. I chopped the veggies in the food processor, and added red onion and a tomato chopped by hand. I also added cracked black pepper. I am making an effort to eat vegetarian a few days per week for health reasons, and this receipe will definely remain on my radar. My only complaint is that one would have to add a ton of parmesan cheese for it to make an impact.

Spinach and Feta Pita Bake

I prepared this using regular basil pesto, as I had made some a few days beforehand and wanted to use it up. I used Greek pocket-less pitas. What a great weekend lunch! So easy, and yet tasted excellent. I especially like the potential for versatility for this recipe. Yummy!

This is a great recipe for a quick and easy lunch. I used bagel thins, and added bacon to my husband's but not mine. As per the advice of other reviewers, I sauteed the mushrooms in advance of broiling the sandwiches.

Pesto Chicken

Oh my goodness this was SO GOOD! I made the pesto from scratch the day before and had my husband assemble the chicken breasts, pesto and proscuitto and put everything in the oven before I got home from work. He was very proud of himself for having "cooked" something so elegant-looking and tasty! We will definitely be making this again, perhaps even for company! We served this with roasted garlic cauliflower, another awesome recipe from this site.

Chicken Fettuccini Alfredo

This recipe turned out well, though I found it to be a lot of prep for the end result. (And I LOVE to prepare and cook good food!) I feel as though there are other Alfredo recipes out there that require less prep and taste just as good. I definitely recommend halving the recipe unless you're planning to feed a small army. Beyond that, the recipe is very adaptable (chicken or no chicken, tomatoes or no tomatoes, etc.) and easy to suit to individual tastes. I'm not sure that I'll make this again, but perhaps some variation of it...

Baked Goat Cheese Caprese Salad

This was phenomenal! I made the recipe using grape tomatoes rather than cherry tomatoes (the grocery store didn't have the latter), so next time I might increase the ratio of tomatoes to cheese if I use grape tomatoes again. My husband, who tends to be hit and miss when it comes to goat cheese, said twice that it was "very nice". (That's his "speak" for "I loved this!") I look forward to making this for company, it's so easy and presents so well. GREAT post, one of the best recipes I've come across on this site!
