Baked Teriyaki Chicken

Awesome! I halved the recipe and started my chicken thighs partially frozen so the cooking time worked out fine. I did lower the temperature to 400 degrees. Delicious teriyaki sauce; don't think I have ever had better. Will definitely make again!

Spanish Rice Bake

Good! Great way to use leftover rice. I cooked the onion, green pepper & hamburger; drained and then mixed everything together and put into a 2 Qt. rectangular baking dish; topped with cheese and sprinkled cilantro (didn't have fresh) and put in refrigerator until near dinnertime then baked in oven for 30 minutes.

Roast Chicken with Rosemary

Good! Our grocery store was out of fresh rosemary so just used salt, pepper, and a little chicken broth and butter to baste with. Enjoyed this and used the leftover chicken and broth for chicken tortilla soup.

Quick and Easy Green Chile Chicken Enchilada Casserole

Great flavor! Husband and I both liked this! I used 3 chicken breasts instead of 4 and 2-10oz cans green enchilada sauce instead of 1-28oz, 10 corn tortillas instead of 18 and 8oz sharp cheddar, 4oz M. Jack, and 4oz pepper jack. I baked in 2 Qt. rectangular dish for 45 minutes. Important to allow to set for atleast 10 minutes. Will make again except will probabaly roll up into enchiladas to improve appearance. Also, good to use a cheese mix including cheddar to add some color.

Lemon Pudding Cake I

This was good. I followed previous reviewers and cut sugar back to 1 C. Wish I would have followed the originial recipe and used the 1 & 1/2 C. sugar. Other than that, thought it was a fairly good and easy recipe. Ideal for a light dessert after a heavy meal or great summer recipe.

Tuna Noodle Casserole II

Awesome "homestyle" recipe. Easy & delcious. I used medium shell pasta and also added a stalk of chopped celery and a few sliced mushrooms (I pre-cooked in a Tbsp. of butter before adding). I also added an additional 1/2 can of cream of mushroom soup that I had leftover. I split recipe into two square pans instead of cooking one 9x13. I froze one unbaked for a future meal. Kids ate it well and loved that it had crushed potato chips on top.

Taco Casserole

Awesome! Hubby had seconds and said "this one's a keeper!" I even used whole wheat elbows and couldn't tell the difference. I also chopped the green onions and put them on the casserole before cooking...great color and flavor.

To Die For Blueberry Muffins

Awesome! I ended up having enough batter to fill 11 regular muffins. I didn't want to over-stuff them too much as I wanted to make sure there was plenty of room for all the streusel topping that this recipe makes. This is a keeper!
