Italian Subs - Restaurant Style
Great Sub, the salad mixture ROCKS!!! I left out the lettuce and just added it at the end, I also added hot and sweet pickles chopped up to the slad mixture . I used turkey, genoa salami and provolone cheese and whole wheat Italian bread. Awesome!!

Spinach Basil Pesto
My 4, 7, and 9 year old love anything with pesto in it so I wanted to find a way to make it as healthy as possible since they eat it almost every day. The spinach adds veggies and I used Walnuts to add Omega I added 1/2 cup more walnuts than the recipe called for. Really good recipe. I have huge crops of Basil in the summer time so I double the recipe and freeze in ice cube trays so it lasts for a few months.

Buffalo Chicken Dip
I Love this dip. I did make quite a few changes though. I used blue cheese dressing then I added about 1/3 cup of crubled blue cheese to intesify the blue cheese flavor. I used boneless skinless chicken breast instead of canned(hate that stuff!) and I added a 1/2 teaspoon of cayenne pepper (I like it really spicy) and I added a 1/2 cup of finely chopped celery for some texture. Then I used tortilla chips for dipping The results were excellent!
