Beth's Chess Pie

I'd never heard of a Chess Pie but saw it while looking at reviews for Sugar Pie. I made one last night and I am pretty sure the Sugar Pie recipe will go behind this one. Oh my gosh, it was perfect. Hubby has a sweet tooth and this made his day. The only thing I did different was to use milk because i didn't want to open a large can of evap. milk. It didn't seem to hurt it any. Thanks Beth!

Mini Cheeseburgers

Ok, catsup and cheese. Big deal right? Well, yes it is a big deal. Every bite the hubby took was followed by a "Yum". These were so tasty AND I served them on noodles. So easy, I'll be making these again!

Christmas Cinnamon Pears

Our cousin makes this and all she does is let the pears and red hots sit together overnight. But this recipe insures that the candies melt! Hope my daughter takes this to her first t-giving with her boyfriend. Everyone will be impressed.

Baked Penne and Smoked Sausage

We loved this recipe and the only thing I did different was that I cooked the pasta separately so it didn't have to be in the oven for 45 minutes. It is 90 today so wanted to keep the oven at a minimum. I may try green beans or other veggies too.

Red Potato Salad

I really, really liked this salad and even thought i added a little dill it didn't actually need any 'tweaking'. i just didn't have any chives mature evough to cut. YUMMO

Shepherd's Pie

I thought Shepherd's Pie would be too complicated for this meat & potato cook. But I was wrong. I used leftover carrots and corn, added garlic and a little rosemary that i had in the freezer and threw some cheese on the top. My other half had 2 helpings and is thinking he should have some more. And he's the skinny one. Oh well.

Almond Chicken Casserole II

I used a can of each soup, chicken and mushroom. (it was too much-should have stuck to the recipe) We liked it a lot but I will need to scale down next time. I only used 1 cup of uncooked rice and thought that was plenty. Loved the celery and almonds and will add even more next time.

Quick and Easy Alfredo Sauce

Just browsing for something quick and good to do with chicken and spaghetti. I threw in some green pepper that I had left over. This was awesome. I didn't have enough cream cheese so I cut the recipe in half and we had plenty for the 2 of us. Asked the Mister if I should save the recipe (LOL) and he looked at me like I had 2 heads. Thanks for the great dinner!

Banana Cake X

This is an awesome banana cake. It's nice that it's now just another banana "bread". Not heavy or dark. I use the old cream cheese frosting and my husband likes it that way. But I'm gonna search for a Caramel frosting this time. thanks Beth!

Raisin Sauce for Ham II

I thought this recipe was awesome. I noticed some reviews thought the sauce was too thick, so I reduced the cornstarch to 1Tbls. I had never had raisin sauce before so I asked my brother-in-law how it was and he said "not thick enough". Must be a personal thing. I think I will make it again just as I did tonight

Sweet Orange Chicken II

Super recipe! And soooo easy. My husband & I both loved it. The only thing I changed was the cranberries. I had dried Michigan cherries in my fridge so I used them(finally a use those cherries) and am glad I did because they were a tad tart. Also, I took about a cup of the juice and thickened it a little for a sauce which was also a hit with the Mister. This is a keeper. Thanks, Jaynine!

Just finished dinner(this recipe) and my husband raved!! He was sure it must be lamb or some other meat than ground beef. We will definately have this again. Maybe for company next time. I, too, left the raisins whole.

Elvis Presley Cake

Ohmygosh! This will be one of my favorites! We love pineapple and we love cream cheese frosting. I took this to a family affair and everyone loved it. I refrigerated it so it was cool when we served it and very refreshing! I wasn't a great Elvis fan but I am now. ( I also reduced the sugar to 1 1/3 cups)

Royal Coconut Cookies

I've been looking for just this recipe. It is almost like a cookie I remember from a neighborhood bakery in the 60's. I added large pieces of pecans and a little salt and these cookies are delicious
