Black Beans a la Olla

Great recipe. Just the right amount of spice and easy to make. I used a pound of dried beans instead of canned. Just put them in the slow cooker with about 5 cups of water for a few hours before adding the rest of the ingredients. It takes about 8 hours this way. Left out the cilantro because my hubby won't allow it, but I think it would be a wonderful addition if you don't have picky eaters in the house. Added a splash of vinegar toward the end to fix the lack of umph. Otherwise, I wouldn't change a thing about this recipe!

Asparagus Ham Fettuccine

I'm not normally a big fan of ham and cheese together, but I had a *lot* of ham left over after Christmas, so I needed a new way to serve it. Ham and cheddar are overpowering for me, normally. But this dish was great! The sage added a bright aftertaste to the ham and cheese that mellowed the flavors considerably. My husband loved it, and my 3 year-old was equally impressed. Definitely will make this one again. I subbed pecans for the walnuts, since I didn't have any. This dish would go well over brown rice as well as pasta.

Chickpea and Pasta Soup

Pretty good! The only thing I changed was to add about a 1/2 tablespoon of vinegar. It lacked acidity for me. Taste it before you add the vinegar, since it may be due to the brand of tomatoes I used. Also, if you use dried rosemary (which I did) let it simmer a little longer so the flavor can develop.

Green Beans With Walnuts

I have no idea how this recipe actually tastes using green beans. I used asparagus instead. I also skipped the parsley, as it was superfluous. Otherwise, I didn't change a thing. It was a big hit with the family at Easter! You can just trim the asparagus or cut it into bite-sized segments, steam the asparagus for 5 minutes to soften, then saute with the rest of the ingredients. I'll be doing this again and again. Even my 3 year old enjoyed it.

BBQ Pork for Sandwiches

This recipe works beautifully with a good Carolina barbeque sauce. This site doesn't have a very good authentic recipe for BBQ sauce, so I used my own. A pork shoulder works just fine. Skip the ribs, save some money.

Butter Bean Burgers

Very good. I followed the recipe exactly the first time. Good, but not "meaty" enough. Needs a more substantial bean than butter beans. The second time around I followed the advice of some other commenters and used black beans instead of butter beans. Much, much better. I also added a little bit of cayenne and worchestershire sauce. We do this meal every couple of weeks.

Chicken Breasts Pierre

Love this! Do double the sauce, especially if serving with rice. I leave out the garlic, because there's really no benefit from that little bit of garlic anyway, and this is a no-chop meal without it. Lazy. This is a good dish for the lazy. :-)

Naan

A few tips: Leave the garlic out. It makes no sense. Use a pizza stone in a 425 oven, turning once for browning on both sides, and drizzle the butter on after the bread is finished. Also, if you have a tortilla press, use it! Save yourself the trouble of rolling the dough. This bread isn't exactly authentic. As my husband's Indian co-worker says, if it has any flavor, you're not doing it right! This is very good bread, though. I've made it several times using both my pizza stone and my Foreman grill. Use a stone if you have one. You get a better texture this way. This recipe has become my go-to for naan, even though it's not remotely what I expected the first time I made it.

Belle's Hamburger Buns

Not too bad, not too good. Update: I made these buns ahead of time and only tasted one by itself before I made my first comment. After having garden burgers with them, I'm changing my rating from 3 to 4 stars. These are actually great buns! I do think I may have overworked the dough a little, which messes with the texture a bit. Next time I'll set my timer.

Tomato-Cream Sauce for Pasta

This is a fantastic and simple dish. I'll be doing this again--often! I used half-and-half, because that's what I had on hand. It would definitely be a little bit better with heavy cream. It needs the richness.
