Tomato-Cream Sauce for Pasta

This is a fantastic and simple dish. I'll be doing this again--often! I used half-and-half, because that's what I had on hand. It would definitely be a little bit better with heavy cream. It needs the richness.

Asparagus Ham Fettuccine

I'm not normally a big fan of ham and cheese together, but I had a *lot* of ham left over after Christmas, so I needed a new way to serve it. Ham and cheddar are overpowering for me, normally. But this dish was great! The sage added a bright aftertaste to the ham and cheese that mellowed the flavors considerably. My husband loved it, and my 3 year-old was equally impressed. Definitely will make this one again. I subbed pecans for the walnuts, since I didn't have any. This dish would go well over brown rice as well as pasta.

Butter Bean Burgers

Very good. I followed the recipe exactly the first time. Good, but not "meaty" enough. Needs a more substantial bean than butter beans. The second time around I followed the advice of some other commenters and used black beans instead of butter beans. Much, much better. I also added a little bit of cayenne and worchestershire sauce. We do this meal every couple of weeks.

Best Brownies

Great brownies. For higher altitudes, you may want to add a tablespoon or so of flour and increase your baking time a bit. My family loves these, with or without the icing.

Linguine in Spicy Red Clam Sauce

This is a wonderful recipe, especially to be so easy. Not quite as spicy as I'd hoped for, though. Just a touch more red pepper, maybe. The sauce takes a while to reduce to a less liquid consistency, but I wouldn't drain the tomatoes like some of the other commenters have. It would detract from the flavor too much. Just be patient and cook it down. Also, I don't put the olives in until near the end, just long enough to warm up. I have no idea what's wrong with the negative reviewers. I absolutely love this!

BBQ Pork for Sandwiches

This recipe works beautifully with a good Carolina barbeque sauce. This site doesn't have a very good authentic recipe for BBQ sauce, so I used my own. A pork shoulder works just fine. Skip the ribs, save some money.

Fabulous Fajitas

This has become a regular around our house. Fantastic and fast! I do change a few things. 2 green peppers is overkill, so I only use 1. I also double the mushrooms and add sour cream and baby spinach as toppings. Yummy stuff! The italian dressing mix is a great trick!

Janet's Chicken Casserole

This is the best chicken casserole I've ever tasted. Definitely will do again. The only change I made was using 2 small cans of mushrooms instead of fresh ones and frozen peas and carrots rather than canned. Delicious!

French Bread

Not too bad. The family loved it, but it was a little bit too dense for my taste. Makes great french toast! Update: I must have misread the recipe the first time made this wonderful bread. I've made it several times since I first reviewed it, and it has been perfect every time. I'm changing my rating from 3 stars to 5.
