Easy Grilled Lemon Chicken

We prepared this recipe as specified. NO changes. The boneless chicken breast pieces were allowed to marinate in this sauce for three hours. The resulting grilled chicken breast was very flavorful, but somewhat salty. I intend to use this recipe again, but I will find a way to reduce the soy-based salt content. Maybe I will substitute orange juice. Maybe some white wine. Also may add some oil, since it turned out slightly dry towards the end. Overall, very tasty!

G's Flank Steak Marinade

This marinade was used with a lean flank steak, allowing to to sit refrigerated for 5 hours. The steak was grilled until the internal temperature was 155 degrees. The resulting meat was delicious, albetit a bit salty. I plan to redo this recipe, cutting the soy in half, and replacing the lost liquid with some sort of juice (orange, apple, tomato, grape, wine???). I may even use low sodium soy. But overall, give it a try. I did like the basic premise of the marinade. Recommended, highly.

Broiled Tilapia Parmesan

This recipe is good. The fish was tasty, but did not have the crunchy coating I was hoping for. I will continue to search for that recipe, but would prepare this again, possibly cutting the amount of mayo by a tablespoon, or so, to improve the coating texture.

Tabbouleh I

This salad is astoundingly good. The onions, parsley and lemons dominate the flavor so much, that the mint doesn't come through. Next time I will maybe cut back on the onions or increase the mint. I didn't have bulgur so I used whole spelt berries that I soaked overnight and boiled for an hour. I like the texture they provide.

Flounder Mediterranean

We tried this tonight and it was fabulous. The sauce is a stand-alone hit, and works very well with the fish. We believe this sauce would work very well with chicken. The only thing we changed was the tomatoes. We used a 14.5 oz can of diced Italian tomatoes. Otherwise everything was the same. Highly recommended.
