Cinnamon-Raisin Granola

This was wonderful. Made it gluten free by using GF oatmeal. It was delicious. I put it in parfaits for a brunch I just had. People thought it was wonderful!

Oatmeal Waffles

These are awesome! I made them gluten free for a baby shower recently. I used Pamela's Gluten Free pancake mix in place of the flour. Other than that, I made the recipe exactly as shown and several people asked for the recipe. This is a keeper, thanks for sharing the recipe!

Green Beans with Hazelnuts and Lemon

This was so tasty and my husband went back for seconds and he says he doesn't like green beans! I steamed the green beans then made it like the recipe but didn't have hazelnuts so I substituted macademia nuts. Loved it!

Slammin' Salmon

This was awesome, shared it with my family. It was the first time my husband ever went back for seconds with salmon! The only thing I did different was I deleted the soy sauce to make it gluten free. Everything else was the same as the recipe. This will become a regular in our house!

Enjoyed this very much. Made a few changes. Since I need Gluten Free I used brown rice flour. I used fresh broccoli, and quinoia fettuccine. I also added chicken leftovers. It was awesome, will definately make again! Thanks for the recipe!

Alison's Gluten Free Bread

This recipe was Awesome! I brought my Gluten free Friend a sample and she loved it and wanted the recipe! It was so moist and it made great toast. I did not have millet flour so I used sorghum flour instead. The first time I made this it did not turn out, and after reading on the internet I found out the eggs and egg whites should be room temperature. (which I did not do the first time) After all the good reviews I wanted to try it again and it made a huge difference. I did it in my bread machine on GF setting with medium crust. Also, I live in a high altitude area so I was afraid of it not working because of that. I am so glad I did not give up! I found a recipe I will stick with and will not look any further! Thanks so much!

Baked Kale Chips

I made this 3 times to see if it would improve. I had a hard time getting it crunchy so I left it on longer. It burned. It really shrinks down to nothing. I liked the few that got crunchy. My family would not eat it. It tasted like brussel sprouts to me and that is one of my favorite vegetables. I will try it again, I just need to tweak it to get it crunchy. It may have something to do that I am at a high altitute, or perhaps I put too much olive oil on it. Will keep trying.

Carol's Arroz Con Pollo

This was delicious. I made with brown rice instead of white rice. I left out the wine and saffron and parsley since I didn't have that on hand. Also I used red, orange and yellow bell pepper. It was delicious and tasted very fresh. I brought the leftovers the next day to work and everyone commented on how wonderful it looked and smelled! It was wonderful! My whole family enjoyed it! Thanks for the recipe! Will definately make again and I don't think I will change what I did, why ruin a good thing. If it is not broke don't fix it right?

Grilled Spiced Chicken with Caribbean Citrus-Mango Sauce

This was excellent. I made a few changes, I used Gold Rum instead of Dark Rum, chicken thighs and drumsticks, and brown rice. Also, I did not have anise. I think I would use chicken breast next time just because it is easier to eat. My husband liked it and he doesn't usually like fruity sauces on his meat. This is a keeper, I think I will make it for my Bunco group! I really enjoyed the fresh taste!
