Orzo with Parmesan and Basil

The orzo turned out perfectly cooked. I didn't add salt and pepper to the dish b/c paired it with chicken breasts in caper cream sauce recipe which I found on this site. Made for the perfect pair.

Chicken Breasts in Caper Cream Sauce

Great recipe and will make again. Simple, quick, and hubby enjoyed it. I found this dish salty so I checked my lemon pepper seasoning to realize that salt was the first ingredient. I doubled the amount of cream b/c the amount of sauce seemed like too little. Unfortunately my cream wasn't nice and cream-colored though. It was more brown-colored from the browned pan drippings. I served this with sauteed spinach greens along with a basil/parmesan orzo pasta recipe that I found on this site. Perfect! Next time I'll half the salt in the dish if I use the same lemon pepper seasoning. Check your lemon pepper to ensure it doesn't have added salt!!

Meatball Nirvana

HUBBY LOVED THESE! I expected my husband to tell me that these meatballs were not seasoned to his liking since there is no Lawry's Seasoned Salt in them. However, he ate 6-8 of these immediately(I made smaller meatballs) and the next day asked me to make more. He would go into the fridge and pop the cold meatballs for a high-protein snack and within 3 days he'd finished the batch! I only had 4 of them! I'm making a triple batch today so I can freeze some.

Oatmeal Peanut Butter Cookies III

I missed girl scout cookie season this year and was craving the peanut butter sandwich cookies when I found this recipe. This is a great cookie! I used a small cookie scoop which yielded 48 cookies (24 sandwiches). I also baked the cookies for about 10 minutes to get a crispier cookie that wasn't too hard/browned. I found that the cookies have a tendency to crumble so I'll check out a few of the modifications that others made to yield a more robust cookie. Be warned that this is a rich cookie recipe.

My-Hop Pancakes

Absolutely delicious! All of the recipes I've tried heretofore have generated a pancake that was too dry, too dense, or too eggy. This recipe delivers the perfect pancake. It will make you institute a family pancake day-of-the-week. I froze a few from the batch and they heated well in the microwave the next day.

Blueberry Sour Cream Coffee Cake

Very nice recipe. I originally just wanted a sour cream coffee cake but when I found this recipe I decided to try the blueberry addition. This recipe made a moist, dense coffee cake just like I wanted it with the brown sugar filling and topping. Instead of the full bundt pan, I made small bundt and tube pan cakes out of the which easily filled 8 of my small pans so that I could freeze some of the cakes for later. The cake refrigerates well and tastes good right out of the fridge.

Cranberry Orange Bread

This recipe was great! I will definitely make this again. I was craving cranberry orange muffins (like the ones that Dunkin Donuts used to make years ago) but I couldn't find them anywhere. This was exactly the taste that I wanted! I made a few minor changes to the recipe: used fresh mandarin orange sections, 2 tablespoons of frozen OJ concentrate mixed with 1/4 cup of water. I reduced the milk to 1/2 cup and reduced the sugar by 1/2 cup also (since I used the sweetened OJ concentrate). I used the fresh cranberries b/c I like the tartness factor but I did take the advice of several others and coursely chopped the cranberries so that they weren't too tart. The bread turned out very moist with a pronounced orange flavor that really came through without being overwhelming and the tartness of the fresh cranberries was perfect!

Old Fashioned Onion Rings

This recipe is the bomb! It's pretty easy to make too. I used panko bread crumbs which added a wonderful crunch. I also used popcorn salt which the batter "holds onto" much better so you don't need much. One tip: stir the batter about 1/2 way through coating the onion rings. I worked in batches and I found that the latter batches seemed to lose their batter/breading. When I discarded the batter I noticed that it was thicker on the bottom which led me to believe that the flour was settling to the bottomof the bowl. These reheat pretty well if you put them in the oven on a baking stone (a cookie sheet will likely work as well). Enjoy!

Roquefort Pear Salad

This is a keeper! Well balanced flavors and textures. I wasn't sure if I should use regular prepared yellow mustard in the dressing - turned out perfectly. I added some chicken strips to make this a full meal.

Thai Beef Noodle Salad

This recipe is a pretty good one. My husband really enjoyed it since it was full of fresh veggies. I made a few changes and cut the vinegar in 1/2 (took the advice of other reviews), added more honey to taste since I prefer a sweeter dressing, and doubled the orange juice (actually I used 1 tablespoon of pineapple orange juice concentrate and 2 tablespoons of water b/c I didn't have any OJ on hand). The dressing turned out perfectly. I thought that I should blanche the veggies but I tried it as written. Marinating the salad for a few hours "softened" the veggies but still maintained a nice fresh crunch.

Curried Cashew, Pear, and Grape Salad

This salad was a great change of pace and was relatively easy to make. I would definitely make it again - even my mother-in-law enjoyed it and she is a very simple eater who doesn't like to try too many things outside of what she knows. Next time I would decrease the dijon in the dressing b/c the taste was too strong for my liking.
