The Best Bean and Ham Soup

Very tasty! Not the bland ham and navy beans I remember from my youth... Served with cornbread muffins for dinner and was happy to have leftovers for lunch the next day ;) Great way to use Easter ham leftovers!

Chicken Florentine Casserole

My family LOVED this! Has a wonderfully rich flavor and is so easy to throw together! I used chicken tenders, since that's what I had on hand, and seasoned with a bit of Italian seasoning before baking. I couldn't see using canned spinach. I used fresh baby spinach. FANTASTIC over whole wheat farfalle pasta. I'll work this recipe into the regular rotation! Thanks BRYAN!

Smothered Green Beans

Very tasty! In the future, I will remove the bacon and all but a teaspoon of the drippings from the pan and return the bacon once the green beans are nearly finished. prefer a bit of crispness to the bacon. I may even reduce the bacon by a couple of strips. This dish WAS quite bacon-y. I will definitely make this again, though! Went wonderfully with roast beef!

My Country Style Steak

Thank you for this recipe! I make this at least once a month now because it is just so tasty and everyone in my family loves it! Occasionally I like to change it up a bit and add a can of condensed golden mushroom soup or cream of mushroom. Makes for a rich, flavorful gravy and I usually freeze the leftover gravy to add to future beef stews!

Peanut Butter Cup Cookies

Sooooo goooood! Thanks for sharing! For some reason, I don't own a mini muffin pan, so I scooped dough out by the Tblsp, rolled into balls, and baked for 9 minutes on a cookie sheet. Pressed frozen pb cups in, and they came out great! Took these to my daughter's Girl Scout meeting and they were a hit! Thanks for a great cookie recipe!

Butternut Squash Soup II

Wonderful! I made this recipe as written the first time and it was quite tasty. The second time and ever since, I have roasted the squash beforehand and sauteed a clove of minced garlic with the rest of the vegetables, a pinch of curry powder and ground cayenne pepper added before simmering, and 1/2 cup of half & half added to the blending process. I like each bowl topped with a bit of mascarpone cheese. These changes made this soup perfection, in my book!

Smooth Sweet Tea

Here in East Tennessee, folks can be downright snobby about their sweet tea. And I've never made a pitcher that I felt confident serving to guests... Until now! THANKS A MILLION! No more store-bought for us! Not sure of the kitchen science behind it, but the pinch of baking soda does the trick and as long as I follow the recipe exactly, my sweet tea is perfect every time and a pitcher never makes it through the day!

White Chili I

Tasty! My husband and I enjoyed this. I felt it was maybe a bit soupy, and I think chili should be thick, hearty, and saucy. Next time, I will thicken it with a bit of cornstarch.

Delicious! I made this as written and it turned out great! The only thing I do differently now is that I cut up the bacon before frying, add the onion and garlic during the last half of cooking, drain the grease, the combine everything in my crockpot and cook on low all day, taking the lid off during the last hour so it will thicken. Fabulously easy and tasty! Definitely a crowd pleaser!

Seven Layer Taco Dip

My experience with making this dip was that the salsa caused it to get a bit watery and break down the sour cream/cream cheese layer, and the lettuce wilted and became a bit soggy. Tasted great and guests gobbled it up regardless, but didn't look terribly appealing (I overheard a lot of "what is this?" and "it's good, just a little messy-looking")... I solved this problem by combining taco seasoning, refried beans, and salsa for the first layer. This also ended up bulking up the bean layer, which I thought was a bit thin the first time I made it. For the sour cream/cream cheese layer, I now substitute sour cream with green onion dip. Adds a little something extra, I think. I made guacamole to top the sour cream layer, then topped with chopped tomato (omitted bell peppers, green onions, and lettuce), finely shredded cheddar and sliced black olives. I will definitely make it this way from now on! It held together beautifully and the flavors and textures were perfect!

Pineapple Upside-Down Cake V

Turned out great, but beware of over-baking. I turned each layer out onto my cake plate straight out of the oven and had no trouble with cracking. Presentation was lovely! Was really good with a big dollop of fresh whipped cream and a maraschino cherry on top of each serving!

Tortellini Soup I

Hearty, flavorful, healthy... One of those soups that "hits the spot". My family loves this! Fabulous recipe as written, but after making this many times, I make a few changes that are purely personal preference. I leave out the water and use 3 cups beef and 3 cups vegetable broth, chop up the stewed tomatoes so there aren't huge chunks (or my kids would never eat it), *julienne* carrots (really does something for the texture), double the zucchini, and omit the bell peppers or halve the amount (too bitter for my liking, I guess), and I like to add a can of kidney beans (drained & rinsed). Fantastic paired with garlic bread sticks!

Fluffy White Frosting

Not as good as I'd hoped. I realize I may have been looking for more of a whipped cream type of frosting, though. This, in my opinion, was a little too complicated for the end result, which was lacking flavor and a creamy texture. Pretty, yes. Delicious, not quite.

Avocado Shrimp Ceviche-Estillo Sarita

Excellent! I made this the night before to take to a lunch get-together at the park with my mom friends. I think the extra marinating time in the fridge did a lot for the flavor and pretty much stamped out any fear of "under-cooked" shrimp. I served it by spreading homemade guacamole on tostadas, then spooning ceviche over the top. It got rave reviews and there wasn't a speck left! This is also quite healthy and low cal! Can't beat THAT with a stick!!... Thanks for sharing a great recipe!

Amazing that something so simple would be DEVOURED by every child at my daughter's sleepover! I'm sure the number of sausages differs from brand to brand, but I used 3 cans of crescent dough and ended up with a couple of "naked" sausages.

Slider-Style Mini Burgers

My family LOVES these! Sooo good and super easy (I love your tip for slicing the tops of the rolls off all at once - CLEVER!). We have come up with a couple of variations that we like, just to shake things up a bit. The Oktoberfest Slider: Omit the mayo and onion soup mix. After draining the ground beef, stir in 1/2 cup sauerkraut (drain and squeeze out liquid) and 1 Tblsp dijon mustard. Complete the recipe as usual. The Lunch Lady Slider: Omit the mayo and substitute shredded American for the Cheddar cheese. Stir 1 can of sloppy joe mix into drained ground beef mixture. I will say that my youngest daughter is not a fan of mayo, so I reserve a bit of ground beef for her special sliders and add mayo to the rest. I just designate the end row for her no-mayo sliders. Works for us! Thanks for a great recipe! Super as-is and also wonderfully versitile.
