To Die For Blueberry Muffins

Reviewed: Aug. 25, 2002
These are pretty good, although they are not THE BEST blueberry muffins I have ever tasted. I expected them to be sweeter. I am glad I made the topping which added sweetness. I did have to mix and mix the crumb topping before it was more than just brown powder. I was getting worried for a second. Maybe I'll add some vanilla or sugar to the recipe next time. I only cooked them for 18 minutes and they were PLENTY done. I would even consider baking them for 1 minute or 2 less, but I love my muffins soft, not dry and crumbly.

Pears Covered with Chocolate

Reviewed: Aug. 25, 2002
Very simple like the recipe says, but I could have saved time peeling the pears and just used canned pears. It's not going to be that recipe that makes everyone say "WOW! How did you do this?"

Chicken In Basil Cream

Reviewed: Aug. 25, 2002
My husband is a PICKY eater and when he says, "YUM! This is really good. We need to have this again!" I WILL be making it again! It is a little on the fattening side with the cream so I might try a lighter substitute for the cream next time. This is a KEEPER!

Aunt Blanche's Blueberry Muffins

Reviewed: Aug. 29, 2002
These are pretty amazing. I used fresh blueberries and 1 whole cup more than the recipe calls for. I added about 1/4 cup extra sugar too and I also took them out a few minutes early and they were soft and yummy! They are addicting. You won't be able to eat just one!

Dessert Crepes

Reviewed: Sep. 4, 2002
Pretty yummy but not the absolute best crepes I have ever had. I am spoiled since I had crepes in France. Those would be hard to beat, but these are pretty good. We just had them with a little whipped cream and strawberry sauce.

Easy Sugar Cookies

Reviewed: Sep. 11, 2002
We used this recipe to make a huge pan cookie to layer it with fruit and a cream cheese frosting to make a cookie pastry. Everyone kept commenting that this was much better than other suger cookie recipes we have used in the past. The pastry was completely devoured in a few minutes. It was nice and soft with just enough crunch to hold it together. Yum Yum!

Joy's Prizewinning Trifle

Reviewed: Sep. 11, 2002
Pretty yummy! The only thing I would improve upon was the angel food cake I used. It wasn't as soft as I would have liked so my suggestion would be to use a soft white cake. The "filling was so yummy by itself that I kept dipping into to filling. That's what really makes this dish. I might make more than the recipe calles for next time and just smother the dessert in the filling. I also didn't have a trifle bowl so I used a glass baking dish. I'm sure it would look much nicer with all the pretty layers if I would have had a trifle dish so if you have one, it will look beautiful.

Aussie Chicken

Reviewed: Sep. 11, 2002
YUM YUM! Another recipe my picky husband gave the thumbs up to make again. That doesn't happen very often, and I am always trying to find meals he actually likes. The cheese did get a little sticky and hardened as it cooled of so my suggestion is to serve immediately while still hot.

Butter Brickle Frozen Delight

Reviewed: Sep. 15, 2002
VERY RICH AND VERRRRRRRRYYY SWEET. It's almost TOO SWEET. Some members of my extended family couldn't finish their one piece and they are big time dessert eaters! Although it's still good before it completely sets up, it takes SEVERAL hours to harden (Like over night). It's good any way you eat it though. Be careful to not press the graham cracker crust into the springform pan or it will be hard as stone in the bottom of your pan. I made a second batch with a double layer crust, since I like thick crusts, and I barely pressed it in. Much better.

Saltine Toffee Cookies

Reviewed: Sep. 30, 2002
At first, it wasn't quite as good as I was expecting with all the 5 star ratings, but it does nicely in a pinch if you need a quick fix. I'll probably experiment with it to make it thicker. The thickness of a single saltine cracker isn't anything to get all excited over. Maybe a thicker cracker would make them perfect. My husband took a taste, made a face and said, "This is really salty." They are alot better after sitting in the fridge at least over night. I made them 2 days ago. I just had one and thought, "OK these are better now!"

Baked Ziti I

Reviewed: Oct. 1, 2002
Pretty good although not THE BEST pasta recipe I have ever had. My brother in law, who is a food connoisseur and a chef said, "I'd give it 7 1/2 or 8 stars out of 10. My husband said, "I might add a little more cheese to make it a little more...cheesy."

Brownie Caramel Cheesecake

Reviewed: Oct. 2, 2002
OH MY GOSH! I thought this was SO YUMMY but my husband said it was a bit too many flavors and too rich for his taste, but his taste is VERY SIMPLE. It did seem to be "less rich" the next day after sitting in the fridge over night. If you are into several layered RICH desserts, this is for you! I did only cook the brownie crust for 10 minutes as many others have done and it was soft and chewy. I made one for a friend and she LOVED it. She said it was the best dessert she has ever had and her husband thought the same! Another friend was over and had a taste and LOVED it so I sent him home with a piece and his wife called asking for the recipe saying it was THE BEST cheesecake she has ever had! She said her sister is a cheesecake fanatic and she wanted to make one for her birthday. This was a huge hit with everyone except for my husband but his tastes are SO simple.

Best Peach Cobbler Ever

Reviewed: Oct. 7, 2002
This tasted yummy but looked like a gooey mess. Then I re-read some of the other reviews and it hit me that I didn't SPOON the peaches out of the juice as the recipe says. I poured all the juice in too! No wonder it came out all mushy. It really tasted great though!

Nana's Apple Crisp

Reviewed: Oct. 18, 2002
With all the rave reviews I expected this to be better. I guess I was expecting it to be "saucier" I can see why others suggest putting the remaining cinnamon directly on top of the apples instead of on top of the topping. Maybe I was expecting too much. It was tasty with ice cream, but I was just a little disapppointed with this.

Brown Sugar Meatloaf

Reviewed: Oct. 23, 2002
I thought this was pretty good! It had a nice sweet flavor and I didn't have to drown it in mustard or ketsup like some meatloaf I have had. My husband liked it too, but he didn't think it was THE BEST meatloaf he has ever had. We just got done having the leftovers for lunch and it was pretty yummy. I'd make it again. I just made this for my husband's family and they all asked for the recipe and said it was the best meatleaf they ever had! I did DOUBLE the brown sugar and ketsup for EXTRA sauce. It was REALLY GREAT!

Cottage Cheese Chicken Enchiladas

Reviewed: Oct. 31, 2002
We only used 1 teaspoon chili powder and it was still too spicy for my husband. I have to admit it had a slight kick, but still a nice flavor. Maybe I did something wrong but I thought they turned out looking like a goopy mess. I made these for another family and they said they were wonderful. She kept raving and raving so I don't think she was just being nice. Personally, I will keep looking for the perfect enchilada recipe because this just wasn't it for us.

Spanish Rice II

Pretty yummy, but a bit too spicy for our family. I'd make it again, but I'd make is less spicy. I made this for another family, and they loved it, but they like more spicy food than we do.

Cheese Garlic Biscuits I

Reviewed: Nov. 2, 2002
Yum Yum! I don't see you could get 9 biscuits from this unless you like really small mini biscuits. It made about 6 medium size. I'll add more cheese next time to make them really cheesey. A nice change from regular dinner rolls

Ultimate Twice Baked Potatoes

Reviewed: Nov. 2, 2002
Very yummy! A little time consuming, but adds a little something fancy to dinner parties. I'll make these again, but I'll add the bacon into the potatoe mixture rather than as a topping. I had large potatoes and I'll cook them longer next time too.

Barbecued Beef Cubes or Hamburger

Reviewed: Nov. 3, 2002
Tasted like sloppy joe meat. Nice flavor. Recipe doesn't say what to do with the pasta, so we just cooked it and served the meat on top.
