Ham and Potatoes Au Gratin

Not gourmet, just good-ole-fashioned hearty food! A great way to use up leftover ham. I had to make it with Velveeta and it was still good. Imagine what it would be like with REAL cheese! I cooked it longer since we weren't ready to eat yet. I think the leftovers would be awesome with a little milk added to make a very tasty potato/ham soup.

Calzone Rolls

4.5 starts for the dough alone. It's incredibly soft. I used olive oil for the shortening and used 2 tsp salt. The kids & I made mini pizzas and then with the leftover dough we made cinnamon stix & cheese stix. Awesome, awesome dough. Very versatile. Thanks for sharing! I'll be trying the rolls very soon.

Shrimp Lemon Pepper Linguini

Loved it. Had to use lemon juice instead of the real lemon. Used 3 Tbsp but I will reduce that next time to 2 Tbsp.

Egg Drop Soup I

I thought this was awesome. Especially for the amt of work that goes into it. It's a very tasty broth. Green onions are a great subsitute for the dried onion if you have the time.

Light Oat Bread

This is great. Can't tell that there's oatmeal in the bread at all. Does anyone know why the shelf-life for this bread seems to be longer than other homemade breads?

Absolute Best Pancake Syrup

Delicious. A "must" for our waffles. Can't really compare it to store-bought syrup. It's thinner but the taste is !wow! and it seems like I'm not constantly adding more syrup to the kids plates when we use this recipe.

Flourless Chocolate Cake II

Baked it in a 8" springform but it only got to be 3/4 inch tall. It doesn't look much like a cake but warm under ice cream it's delish! The chocolate is incredibly rich. I put the leftovers in the fridge and it's the best "fudge" I've ever had. Keeps well there too. A week later and we're still eating it a bite-size (or 2) at a time. I'll make this again just for the intense and real flavors.

Whole Wheat Pancakes

We really liked these. No one noticed that they weren't the usual white flour pancakes. They do take a bit longer to whip up but for the health benefits, it's definitely worth it. I did think that they took longer on the griddle than my usual recipe, so next time I'll leave more time for that. We got 9, 4 inch pancakes out of 1/2 a batch.

Kielbasa and Veggies

Super easy! Good flavor. I served it with sour cream for the kids to dip their potatos in. They loved it. Baked it at 400 because I was late, but I think it still ended up being in the oven for 45 min. Potatos were perfectly done. It was just the right amount for me, my husband,and 4 little ones.

Banana Crumb Muffins

These are awesome. But here's a secret...you don't need the melted butter in the batter. No kidding! I made them for the 3rd time this morning and forgot to add the melted butter from out of the microwave. I just found it when I went to thaw some chx breasts! There's just 3 muffins left and the kids & hubby gobbled 'em up. Thought I'd review this one as there might be some people interested in leaving the butter out.

Mexican Rice II

This is fantastic! Didn't have tomato sauce so I used diced tomatos as someone suggested. Awesome flavor. Not spicy hot so it's great for my kids. Can't wait to serve this to friends on Mexican night. Thanks for sharing!

Mexican Zucchini Cheese Soup

Great soup! The only change we made was to leave the cilantro out and add crushed tortilla chips at the table. It was also on the stove for a bit longer (hour) because my hubby was late for dinner but it was still delicious!

Zucchini Brownies

These are super! I did have to get back on the internet to double-check the recipe. When mixing them up, they are extremely dry until you throw in the zucchini. I also added a cup of semi-sweet chocolate chips. Frosted them warm because the family was waiting for dessert and served them with ice cream. Excellent!
