Vegetarian Chickpea Sandwich Filling

I skipped the lemon juice and dill. Used a green onion instead of a regular one. Added two hard boiled eggs, a little bit of mustard and plenty of low-fat plain Greek yogurt.

Delicious Ham and Potato Soup

We like our soups chunky, and we don't care for cooked celery, so I slightly deviated from the recipe in the following ways: Substituted (4 medium)carrots for celery, used 2 large russet potatoes, 1 small onion, and a 16 oz. ham steak. With the exception of the onion, everything was chopped or cubed instead of diced. Other than those very minor changes, I followed the instructions to the letter, and this recipe is a keeper!

Cheesy Scalloped Potatoes with Ham

This was delicious! I added some basil. When I made the sauce I sauteed the onions in the butter, then added a little bit of flour, then a little bit of milk, stirred, and kept adding flour and milk in small amounts, like you would if making gravy. Otherwise, the sauce is likely to be lumpy. I used Russet potatoes, because they were on hand. Excellent flavor, and it tasted even better the next day.

Easy Cajun Jambalaya

I was looking for a recipe to use up some cooked rice I had leftover and a package of kielbasa. Had never eaten jambalaya before and wasn't sure I'd like it very well. I was very pleasantly surprised! Our food budget was extremely tight, so I omitted the shrimp and chicken and added another bell pepper (and some diced green chiles). Couldn't get over how awesome this tasted! Will definitely be making this again, and probably very soon. Next time I will do as others suggested and add a can of diced tomatoes with chiles. Can't wait to taste it with shrimp in it!

Chef John's Macaroni and Cheese

This was delicious! The only modifications I made were - 1. I didn't realize I was out of nutmeg 2. I boiled the noodles for only 5 minutes 3. I used only 2 cups of cheddar in the sauce and topped it with about 1 cup

Baked Teriyaki Chicken

My husband said this one's a keeper - we both loved it. The only things I did differently were cutting the sugar (by less than half, but I'll cut it even more next time, and maybe even substitute brown sugar or honey) and cooking it the way I always bake chicken - 375 degrees uncovered for 1 hour, then 15 minutes at 400. During the last 15 mins. I roasted chopped broccoli which I had poured some of the extra sauce over. Then mixed the broccoli with brown rice. Dinner was delicious!

Peanut Butter Noodles

Three Cheese Baked Pasta

I skipped the onion, sour cream & tomato paste. I used a jar of marinara sauce, 2 cups fresh spinach, ground turkey instead of beef, & cheddar instead of provolone. Did not cook the rotini, mixed everything together, except for the mozzarella. Covered and cooked as directed. Removed foil, and added mozzarella, cooked an additional 5 minutes.

Best Ever Banana Bread

Excellent! I added some nutmeg, cinnamon & vanilla extract. I also substituted yogurt for the buttermilk, and I would have substituted apple sauce for the oil, but I didn't have any. And I used walnuts instead of pecans.

Ruth's Red Lentil and Potato Soup

I left out the celery (used a whole bag of carrots instead & added celery salt) and the file powder. Went to 2 different stores, neither had red lentils, so I bought the only ones they had - they were not green, they looked tan to me. I always tweak the spices to suit our tastes, but I stayed pretty true to what the recipe suggested. I used olive oil instead of butter. And I wound up having to use well over 4 cups of water, so I don't think the file powder was necessary anyway. Used a whole bag of chopped kale and a bag of frozen spinach. One thing I wasn't planning on doing differently - my husband brought home baking potatoes instead of the red ones, and I don't like the way they come out in soups. So, I left them out and served baked potatoes with this. We both enjoyed the soup. I think I will make it again sometime (with the potatoes in it) if I can find red lentils.

Hot Artichoke Spinach Dip

Instead of heavy cream and sour cream, I used mayo and a package of cream cheese. Also added several dashes of Frank's Red Hot Sauce and a can of crab meat. We both loved it!

Mexican Goulash

Made a few changes - we needed to double the recipe, and we used 1 can of corn, 1 can of diced tomatoes with chiles, and substituted a tall jar of queso instead of salsa and velveeta. There was a picky child eating with us, but next time I will add cumin, cayenne and chili powder. We did as others suggested and served with sour cream, avocado and tortilla chips.

Mango Chutney

I used this in a chicken curry recipe, after cutting it down to 6 servings. I used a whole mango and omitted the allspice and ground ginger as I had neither. I also omitted the onion and substituted red pepper flakes for the red hot chiles. I simmered everything for an hour or so. Made the whole house smell wonderful, and it worked well with my recipe!

Curried Mango Chicken

Delicious! I didn't have curry paste, so I used powder and added pepper flakes. Also, after the onions and garlic were sauteed, I let everything simmer slowly for about 45 minutes.
