Spinach Lasagna III

After many concerns and no answers on other reviews here are my own answers after finishing the recipe: YES you can make ahead, I stored mine uncooked in the fridge overnight and cooked it next day for dinner, just don’t cook the noodles; buy pre-cooked and add a little bit more sauce. YES you can use cottage cheese, just drain it for a while and press it so most of the water comes off the taste is very similar to ricotta and cheaper. YES you can add a layer of meat, just cook it with a little minced garlic and olive oil. NO the spinach is not enough, add 1 more cup. And finally YES you can cook the spinach with the mushroom/onion mix.

Snowballs II

This recipe definitely needs more vanilla; I soak the nuts on vanilla a bit before adding them. I saw some comments about the cookies being hard or dry, this might be because the butter is not at room temperature or not well creamed, the butter needs to look like mayonnaise before adding the rest of the ingredients; if the butter is runny or semi melted the cookies turn out hard, on the other hand if the butter is cold or firm the cookies crumble and turn out dry.

Baked Honey Mustard Chicken

I didn't use the original recipe but my recipe deserves 5 stars. I used DIJON MUSTARD and cut down HONEY to 1/3 CUP. I did the rest exactly as stated in the original recipe. DELICIOUS!

Almost No Fat Banana Bread

Great recipe, the second time I did it turned out much better. First I beat eggwhites with sugar until frothy and folded them after beating the rest of the ingridients. To decorate use rolled oats; just sprinkle on top of the bread before baking.

Chocolate Turtles® (The Candy)

First of all the caramel candies don’t need to be mixed with anything, just heated a little on the microwave so you can form 1 inch balls. Second you do not mix the pecans and caramel; you need to arrange 5 pieces of pecans in a circle to imitate the legs and head of the turtle (that is why they are called turtles) I do this on a baking pan over waxed paper. After forming the ball you push them in the center of the pecans so you can imitate the shell of the turtle. After you have all your turtles arranged in the baking pan you need to refrigerate them for at least 10 minutes, in the meantime melt the chocolate. Immediately after taking them out of the refrigerator coat the caramel with the melted chocolate. I always drizzle them with pecan pieces and white chocolate.

Dietetic Banana Nut Muffins

Great recipe, I gave them 5 stars because they are remorse free and they taste great compared to the almost no calories they have I made my own apple sauce (Sarah's Applesauce) and used splenda instead of regular sugar, I guess that makes the muffins even more dietetic I also sifted the dry ingredients because it gives more volume to the muffins If you care a lot about your figure like I do, try them!!!!

Tuscan Pasta

Great taste and low in calories. Just add a clove of garlic to the olive oil before cooking onions zucchini and mushrooms. Use seasonings without measurements, taste the sauce until you like it. And don’t skip on the fresh parmesan it gives the pasta a lot of flavor.

Spinach Basil Pesto

Delicioso next level. Everything on the recipe works. I did the it one day in advance, stored the pesto in the refrigerator. The next day I cooked spaghetti and while it was still hot y folded in the pesto, OMG, I was even asked what brand of pesto it was! Also this can be served with salad, makes a perfect heavy dressing.

I'm giving the recipe 4 stars because the flavor is unbelievable but the consistency in the whipped cream layer is to runny, need to make an adjustment to this part of the recipe. The rest is perfect I omitted vanilla pudding and it was perfect

Buttermilk Mango-Berry Crumb Cake

Excellent recipe, I used no calorie sugar and fat free buttermilk, this might be a lower fat- lower calorie option for the cake and it still tastes excellent. I only used mangos and it turned put great, I really recommend it.

Super cute! I used strawberry jam instead of frosting because I filled the cupcakes with strawberry jam and the frosting just seemed like too much. The toasted coconut is a wonderful idea!

Chipotle Ranch Dip

I'm so happy I tried this recipe we eat it with everything, chicken, sandwiches, salad, quesadillas, eggs, rice… We can't get enough of this spicy delicious heavenly dip. I make a batch every Monday. Oh almost forgot I use the whole mini can of chipotles, turns out so spicy it makes us cry sometimes haha

Smoked Salmon Spread

Delicioso! I followed other reviews and doubled the sauces. Also I used dried dill weed. I did it one day in advance, of course one day in the refrigerator makes the cheese hard, I took it out one hour before serving and it had a spreadable consistency. A new classic for my dinners or reunions.

Aunt Anne's Coffee Cake

I followed a review; to first bake the cake and while still warm just after taking it out of the oven sprinkle with streusel and wrap foil over it. I discovered is best to take it out of the oven while almost ready sprinkle with streusel and then bake for another 10 mins. Turns out great!!!!!

White Chocolate Fruit Tart

Delicious, great recipe, very accurate and easy to follow. Used pecan flavored white chips the second time and the taste was amazing. I've also made tartellets and they are my favorite they look super pretty and elaborate; I use cupcake pans roll a circle of dough in my hand and I carefully place it, the baking time is less, like 15 minutes, also the cooling time and everything takes less time. Its so fun to decorate each tartellet I love making them.
