Balsamic Bruschetta

5 STARS! If you are reading this and are planning on serving an amazing summer appetizer please try this recipe. I like a recipe when I don’t have to change anything, just follow directions and use the listed ingredients. Only thing I did different based on another user review was that I drizzled olive oil and garlic salt on the bread before toasting it in the oven, I also added shredded mozzarella cheese to give the bread a boost. Delicious, I’m so happy I took the chance to try this.

Tasty Tuna Burgers

A different kind of burger but with an amazing taste; this is a delicious twist on a regular burger it's perfect if you are on a diet, avoiding red meat or just in the mood for something different. When you put the burger together with ketchup, mustard, the buns melted cheese etc. you can't even say it's made of tuna. Recipe is accurate and easy to follow, if you don't want them spicy you can leave out the hot sauce and Worcestershire sauce. I’m definitely making them again and very often.

Garlic Aioli

Great recipe, my only tip is to add whatever you feel is missing, sometimes I add more lemon, or more mayo, I never measure the salt or pepper I add. Sometimes 3 cloves of garlic are too much and I double the rest of the ingredients.

Broccoli Soup

This soup is great alternative for eating big portions of vegetables without feeling like you just eat and entire tree. Perfect for picky kids, the taste is very good and it has a nice consisteny. I always add a little fresh grated parmesan cheese and pepper but that's me.

Pizza Dip

Brought it to a dinner party, the dip was called "lasagna over toast" it was a total hit. I saw another similar, more complicated recipe, and decided to do this one instead; I was definitely not sorry, the dish was cleaned. I did the recipe exactly as stated except I mixed the cream cheese and pizza sauce.

Chayote Soup

This soup is a great way to serve a portion of vegetables and still keep it healthy, I never use butter I use cooking spray and the taste is still good. If you have kids this soup works amazing, they don’t have to know what they are really eating and chayotes have a lot of fiber and vitamins! The crushed pepper flakes give the soup an amazing flavor without making it spicy. We always eat it with grated parmesan cheese.

Chocolate Turtles (The Candy)

First of all the caramel candies don’t need to be mixed with anything, just heated a little on the microwave so you can form 1 inch balls. Second you do not mix the pecans and caramel; you need to arrange 5 pieces of pecans in a circle to imitate the legs and head of the turtle (that is why they are called turtles) I do this on a baking pan over waxed paper. After forming the ball you push them in the center of the pecans so you can imitate the shell of the turtle. After you have all your turtles arranged in the baking pan you need to refrigerate them for at least 10 minutes, in the meantime melt the chocolate. Immediately after taking them out of the refrigerator coat the caramel with the melted chocolate. I always drizzle them with pecan pieces and white chocolate.

Wedge Salad with Elegant Blue Cheese Dressing

The dressing is great! I didn’t find iceberg lettuce and used romaine, it was a big disappointment (at least for me) the taste is very different, if you don’t have iceberg lettuce choose another salad and avoid feeling super sad like me.

Mama's Asian Chicken and Rice

Excellent recipe! This recipe is very usual on my weekday lunches: it’s not complicated, ingredients are easy to have on hand, and the taste is really amazing, I don’t add cornstarch and never miss it, you can skip this step easily. Also the chicken served without rice is an option for a low carb meal.

Greek Couscous

Wonderful taste! Chick peas give the couscous a great flavor. I added sea salt and fresh parsley to the recipe; I really recommend you add these two ingredients for more taste. I omitted water and used 1/2 cup of chicken broth for 1/2 cup of couscous and used fresh tomatoes instead of sun dried. An excellent alternative for rice or lentils!

Ultimate Twice Baked Potatoes

I don’t know what this recipe means with “baking potatoes” but potatoes have to be cooked in boiling water or rinsed to get the starch out. I baked them for an hour and it was almost impossible to mash them, had to microwave them it was a sad mess! I had to take them to a dinner party where everybody said they were “OK” I wasn’t mad but I always like my food “AMAZING”. Bad experience…

Hummus III

This recipe is very similar to my Greek mother’s recipe with some minor differences: my mom usually drains the beans but saves some liquid in case the dip turns out dry (which it almost always does). She also adds 2 teaspoons more of lemon juice and a little bit of olive oil directly to the food processor. The rest is exactly the same. I love this dip with pita chips and makes a perfect appetizer along with tabbouleh.

Waffles I

Delicious waffles! Woke up on a good mood and decided to use my waffle maker for the first time. I had a blast making waffles, the recipe is accurate and easy to follow, I used almond milk and added milk chocolate chips the taste was amazing!

Fast Salmon with a Ginger Glaze

This recipe is amazing. When I finished the sauce I was afraid it would taste a little bit strong on the salmon so I didn't use it all. Turns out everybody asked for more sauce! It has a great taste. I topped each salmon with fresh basil leaves they looked amazing when served.

Microwave Baked Potato

This actually works!!! I couldn't believe it. I saw a similar recipe where it suggested to cover the potato with a wet napkin it's a great technique it works with most types of potatoes. Sometimes I use small potatoes and mix them with dried oregano, salt, pepper and olive oil (just after taking them out of the microwave).

Hot Artichoke and Spinach Dip II

This is a classic in my recipe list. On a christmas edition of my favorite cooking magazine I saw a similar recipe and tried it, it was good but not raving good. I then saw this recipe, it's so good I get asked to bring it to all dinner parties.

Chicken with Chipotle

Spicy, flavorful and delicious, very tex-mex. I use chicken breasts and serve them with guacamole and white rice on the side, the sauce gives the rice a delicious flavor.
