Red Skinned Potato Salad

It only got a four because I had to alter the ingredients. Instead of 2 cups of mayo I used 1/2 cup mayo and 1/2 cup sour cream. I also add 1 Tbsp malt vinegar and use chives instead of onion. I did make it once according to the recipe and found there was too much mayo for the amount of potatoes and other ingedients. But it wasn't a bad recipe, just not to my taste :-)

Healthier Creamy Rice Pudding

I love this recipe! It's a healthier version of one of my favorite foods. I double the recipe and I do double the amount of vanilla and add 1/2 Tbsp of Cinnamon and 1/2 tsp of Nutmeg. I also cut down the amount of suger to 1/2 cup (1/4 cup if making the recipe as stated) and found that it was sweet enough without being 'sugary'. I have found that once it's refridgerated that it tends to thicken quite considerably so I need to add a few tablespoons of milk before I reheat. But it's so wonderful I don't care! Also, try adding the seeds from 1/2 a vanilla pod instead of the spices above. Yummy!

Four Egg Yellow Cake

This cake is awesome! It's always moist, always delicious, and always perfect. This is my go to birthday cake when I make fancy cakes for the kids. I use my own buttercream frosting recipe (passed down from my nana) and it's GONE before the end of the day! Never a crumb spared :-)

Key Lime Pie VII

This is so easy I let my 7 year old do it. Then he feels all wonderful because he made something that tastes so good :-) I do use my own graham cracker crust though, store bought just doesn't cut it for me.

Breakfast Sausage

This recipe is great for me since I am an American living overseas and unable to get REAL breakfast sausage! So now I make it, with a few adjustments for my family (we're not chili fans, we prefer maple sausage) and we get great sausage for breakfast. Thanks for the recipe!

Best Marinara Sauce Yet

I love this recipe because it's so easy and so delicious. I did have to make some substitutes though. I used crushed tomatoes, not stewed. I also add 1 tsp basil, 1/2 Tbsp salt, 1 Tbsp sugar, and usually use less olive oil than it calls for because I don't like it too oily. It is a good base to add onto with good proportions, which is why I gave it 4 stars. But honestly, who doesn't tweak pasta sauce to suit their own tastes??

Quick and Easy Alfredo Sauce

This sauce is wonderful! The only thing I did was add 1 Tbsp dried parsley to the finished product and 1 Tsp salt. WOW! I decided to make seafood alfredo with this for my next family get together :-)

One Bowl Brownies

These are very good when you make alterations. I always use cocoa powder/oil combo when making brownies and make sure to use good quality ingredients, especially cocoa. To avoid cakey brownies don't overmix and melt butter all the way. I find that simply combining ingredients with a fork gives perfect results every time. Also, let them cool in the pan before you try to cut them. This allows them to set. They are very chewy, but I love that in a brownie! I did decrease the sugar to 1 1/2 cups and added 1/2 cup chocolate chunks (I used white, but use whatever you like) instead of nuts. Wonderful! This is my easy brownie recipe :-)

Lemon Cupcakes

The cupcakes themselves are beautiful. Soft, fluffy, moist, and delicious. The only thing I changed was to add an extra Tbsp of zest and 2 extra Tbsp of lemon juice. The Frosting was more like whipped cream than frosting, and that was after I added an additional 3/4 of powdered sugar to try and get a firmer consistancy. It's wonderful and light but wouldn't hold up well in warmer weather unless served immediately. If making these a day in advance or for an outdoor summer party I would suggest a lemon glaze or thicker frosting. The end result was wonderful though and I will make the cupcakes again, just different frosting.
