Cheesy Bacon and Egg Brunch Casserole

This was really good! Loved the addition of cottage cheese and I did use no fat and it worked just fine. I did use turkey sausage but that was the only change in the ingredients. I also cut the recipe in half and did have to "fiddle" with the amounts a little to get the bread all soaked. Had some girl friends in for brunch and everyone liked it.

Turkey Wild Rice Soup II

This was really good on a cold Texas day, which we do get once in a while! I left out the lemon juice and used lemon pepper for my seasoning. Didn't even realize until later in the day that I had forgotten to add the cream and it still was very good! Saved a few calories too!

Rich and Creamy Roasted Eggplant Soup

This was very good! I followed the recipe since this was my first try. I only have one suggestion. Cook the eggplant twice as long and at 325-350 degrees. My onions were starting to burn before I felt the eggplant was soft enough. I finally fished them, the tomato & the garlic out of the pan and let the eggplant finish. I did use 2% instead of cream. 2% IS cream to us! Forgot the cheese at the end, so that will be on the left overs. All-in-all my husband and I really liked it. Thanks for sharing this! Eggplant soup was a new one to me!

Cheesy Baked Eggs

This was really good! I however did want something that was thrown together the night before, so I made it up to the point of adding the flour and stuck it in the fridge until morning. Then I added the flour, gave it a quick mix with the electric beater and popped it in the oven. 4 adults were very happy with it. I do have one thing to comment on...I haved the recipe and in doing so, the cooking time was also cut. It took less than 45 min to cook. Just a heads up in case anyone else cuts it back! Great egg bake and am so pleased to not to have it include bread in the recipe!

Tossed Romaine and Orange Salad

Yum-E! I threw in some left over grilled salmon and some thinly sliced onion and celery and it was a meal for my husband & me. Think I'll try to use less water when I reconstitute my orange juice to punch up the orange flavor a little & maybe add a tad more vinegar because I like the "sour." Agree, it is a little watery and wouldn't keep.

Green Bean Artichoke Casserole

This is soooo good! While I do have left overs, for my husband and I, I use a whole can of artichokes, two cans of beans and half everything else. I do add some of the juice from the artichokes as mentioned. This, steak, wine...a meal. Yum!

Lentil Soup III

We thought this was great! I don't like cooked carrots, so left them out and added celery, green pepper, onions and wasn't very careful about how much, I just dumped. Also used a can of diced tomatoes in place of the paste. Used boullion cubes & water rather than any prepared broth and it turned out wonderful. Even hubby who is not a big soup eater liked it. Easy and cheap with no meat to worry about. Very good! Thanks!

Baked Sweet Potatoes with Raisins and Pecans

Yummy! So easy and so good. I used light syrup and it still was wonderful. I made for Thanksgiving and my chef son-in-low thought it was good too. We will have this often! Thanks for submitting the recipe.

Creamy Pear Pie

We thought this was very good too. I made it like pudding in small individual ramakins and didn't mess with the crust at all. Added crushed pecans to the mix as my pears were real ripe and kind of mushy and I wanted some texture. I didn't have lemon extract so used a little lemon peel. I did put a little cinnamin in with the topping, but no other changes. I liked the slight almond flavor. I would love to try this with other fruit as one reviewer suggested. Very easy and a keeper.

Creamy Celery Casserole

This is so good! I have made it a number of times. Only once did I have a problem and that is when I tried to double it. I made it until where it should have been put in the oven and let it sit overnight in the fridge. That time it got way to runny. I don't know if I should have not increased the liquid or if letting it sit produced all the excess liquid. That is the only time I had a problem. This is one of our new favorites now!

Saltfish Buljol

Made this using leftover grilled swordfish steak and more lettuce to eat as a main dish salad. Both my husband and I thought it was delish! Will try it again using chicken or shrimp or pork. A keeper! Will be a great summer meal.

Confetti Bean Salad

Yummy-yummy-yummy! I made this while helping our daughter move in TX, mid-July. All enjoyed it, even the young men! Makes a huge bowl. Would be great for a picnic. It will become one of my "keepers."
