Beef Fajitas

I made this exactly how the recipe stated, I was a little concerned that the meat would be too tough, but it was good tenderness, I just bought pre packaged fajita meat. Pretty good flavor, not sure if I would make this again. I didn't want it for leftovers the next day, but it was alright. I was really trying to copy Chili's restaurant's fajitas, it was pretty close, but I feel like it needed some different flavors.

Lucy's Mac and Corn

YOU DO NOT HAVE TO COOK THE NOODLES BEFORE!!! Don't drain the corn and it will give you plenty of liquid to cook the noodles as they bake. I was hesitant to cook them or not to cook them beforehand because I was having guests over, but I took the chance and didn't cook them before, and it was perfect. While it is cooking during the first 30 minutes covered, it will be very runny and soupy, but it will thicken up during the second 30 min with the lid off. I used margarine instead of butter, I feel like it was not too much butter at all, but if you want it to be a little healthier I feel you could use probably about half the amount and be okay. This was such an easy recipe to make I will be making it again!

Spicy Corn Dip

Very addicting. For dipping, I just used tortilla chips that were scoops. We preferred tortilla chips instead of Fritos. Followed the recipe exactly except I couldn't find Mexican Style corn, so I just used regular canned corn. Will be making this again for parties!

Yellow Squash Casserole

I didn't have any onion on hand, so I made this without. It was amazing! I cooked my squash a little longer than I was suppose to so it was more mushy. But the flavor was amazing. I could have this with any meal. So good!!!

Creamy Dill Cucumber Toasties

I followed the advice of others and used just a little over half of the packet of Italian Seasoning. Definitely add it to taste. Half of the packet or a little over was perfect for me. I also toasted the french bread slices under the broiler first. Other than that I followed the recipe exactly. Pretty good the first time for a light snack, it was perfect for a brunch. I don't think I will make it again because the italian seasoning flavor was just too much for me.

Waldorf Salad II

Very good recipe. Followed recipe exactly but left out raisins, due to the fact I'm not a fan of raisins, and it turned out perfect. Not too much dressing, I had used 4 rather large apples and the dressing coated them perfectly. I will definitely make this again!!!

Restaurant Style Beef and Broccoli

Followed the recipe exactly. I did let the meat marinate overnight, trying to get it very tender. But it was very tough still. This recipe was very easy to make, but I don't think I will be adding this to my recipe collection. Didn't really care for the oyster sauce either, never cooked with it before. If the beef was more tender and the sauce was made with something different than oyster sauce then this wouldn't be a bad recipe.

Cranberry Rum Punch

I would have liked more ginger ale in this in order for it to have been called punch. The first thing that you taste is the rum, I couldn't even get past that to taste the ginger ale. It wasn't a bad drink, I am glad I tried it, but I won't be keeping this one for the future.
