Broccoli and Cauliflower Casserole
Made this recipe with the advice of others, using 1 cup cooked rice, half the amount of butter and processed cheese. I used 16oz of both broccoli and cauliflower. I felt like this was too bland for my tastes. Some bites were good ( the cheesier bites) and other bites were not. I tend to agree on another users comments amount the buttery crackers not being that good on top. It was good to have a crunch, but they were tasteless to me. IF I make this again I would use more cheese, probably the original amount of 16 oz. And possible add melted butter to my crushed crackers before sprinkling them on. I think that would be way better.

Beef Fajitas
I made this exactly how the recipe stated, I was a little concerned that the meat would be too tough, but it was good tenderness, I just bought pre packaged fajita meat. Pretty good flavor, not sure if I would make this again. I didn't want it for leftovers the next day, but it was alright. I was really trying to copy Chili's restaurant's fajitas, it was pretty close, but I feel like it needed some different flavors.

Lucy's Mac and Corn
YOU DO NOT HAVE TO COOK THE NOODLES BEFORE!!! Don't drain the corn and it will give you plenty of liquid to cook the noodles as they bake. I was hesitant to cook them or not to cook them beforehand because I was having guests over, but I took the chance and didn't cook them before, and it was perfect. While it is cooking during the first 30 minutes covered, it will be very runny and soupy, but it will thicken up during the second 30 min with the lid off. I used margarine instead of butter, I feel like it was not too much butter at all, but if you want it to be a little healthier I feel you could use probably about half the amount and be okay. This was such an easy recipe to make I will be making it again!
