Fortune Cookies II

Reviewed: Aug. 22, 2002
This is the worst recipie I have ever used. Not only are the measurements confusing (7 tablespoons oil, 1/3 cup egg whites), but the batter is mush and the oil in it seperates. They are difficult to spread and once cooked, they are inedible. I made one to test and ended up throwing the whole batch away.

Fortune Cookies I

Reviewed: Aug. 22, 2002
This recipie is terrible. My first batch came out like overly sweetened pancakes. I recommend reducing the sugar to 2 tablespoons, whipping the egg whites just until slightly foamy but not solid at all, and spreading the batter so thin with the back of a spoon that you can see the pan through it. This will help you create authentic fortune cookies.

Creamy Rice Pudding

Reviewed: Aug. 22, 2002
I made this with short brown whole grain rice and it left the pudding very chewy. Also, when I added the egg, it cooked very quickly and left chunks of white egg that had to be removed.

Biscotti Toscani

Reviewed: Aug. 22, 2002
This was the first biscotti I had ever made and I found it very simple and quick. I did not use the orange rind and thought they were better without the melted chocolate. The only problem was that the dough stuck to the counter as I shaped the logs. I had to scrape the logs off with a knife.
