Broccoli and Cheese Brunch Casserole

I also added a crust made from refrig. croissants, and sauteed mushrooms. Skipped the tomatoes on top since some in my family don't like tomatoes. Great - thanks!

Seafood Lasagna I

Terrific flavor; just right for the seafood without overpowering it or making it too rich. I made it with what I had on hand: 1/2 container ricotta, 1/2 cottage cheese, 1 can mushroom soup, 8oz mozz. cheese, penne pasta, shredded zucchini, no flounder, plus the other recipe ingredients. I let it sit for 10 min per the recipe and it wasn't too soupy. I did the layers with the cooked penne, but they didn't stay intact and it was still good. Next time I'll probably also skip the layering since it I like the sauces mixed together. I didn't detect the mushroom soup flavor - it just added to the sauce without making it too rich. Next time I might also added sauteed mushrooms and another clove of garlic. Very good, thanks for the recipe!

Easy and Quick Swiss Steak

Great! I made it with larger pieces of round steak and only needed about 1 cup of flour. Added seasoned salt, garlic powder, and paprika to the flour, plus 2 beef boul. cubes and a few dashes of worcestershire sauce to the tomatoes. Very flavorful and easy.

Secret Shrimp Dip

This was so-so. My guests and I really didn't care for it that much - not that flavorful or interesting. I used 12oz thawed frozen shrimp. I didn't puree it, but chopped the shrimp & cilantro finely. Maybe pureeing it makes it better.

Spicy Bean Salsa

Yum - this won first place in our salsa contest! Following some other reviewers, I used red beans rather than black-eyed peas, fresh tomatoes, chopped cilantro, and a pinch of cumin. I only used half the can jalapenos, but would use the whole can next time plus some fresh lime juice.

Stuffed Green Peppers I

Yum! My favorite stuffed pepper recipe so far. I added some garlic with the onions and increased the rice and water to 3/4c. I had wondered about the tomato soup on top, but it was the perfect balance. A keeper!

Kabob Marinade

Yum. We used it on beef kabobs - excellent! I tried it again and used the beef with a stirfry -not as good. Much better when grilled.

Surprise South Beach Mashed 'Potatoes'

This was okay. Nothing great, but maybe it depends on how much you are craving real mashed potatoes. We prefer cauliflower the regular way.

Rich and Simple French Onion Soup

Connie's Zucchini "Crab" Cakes

This is a keeper! I added parmesan cheese to the mixture, didn't dredge in flour and fried in a non-stick skillet w/o oil. Maybe because of my changes, the patties stayed soft in the middle - more like a potato pancake. My husband is not a zuc lover, but grudgingly gave his approval to this one. Great flavor - thanks!

Strawberry Angel Food Dessert

I was looking for a quick dessert to take to a dinner and this was awesome! I used 2 packages of "short cake" dessert cups since they didn't have angel food at the store and frozen strawberries from my garden. I'll make this one a family classic!
