Slow-Cooker Chicken Tortilla Soup
This was the best soup ever. Even on a hot day! I did add a few things however, I used hominy instead of regular corn, added black beans, used fire roasted tomatoes, added a can of rotele, used all broth and no water, and added chipotle peppers in adobo sauce. It was pretty spicy but that is how I like it. My roommate said it was the best tortilla soup she had ever had

To Die For Blueberry Muffins
have made these twice now and each time they turned out great. The first batch I doubled the blueberries, which wasn't a good idea as they turned out a little too moist (kinda soggy). The second batch I made with raspberries and almond extract, then added sliced almonds to the topping. The raspeberry ones were by far the best. The crumb topping is what is to die for!

Pina Colada Pie
This pie was a cool treat on a hot day, and super easy. The only thing I changed was used half vanilla wafers and half shortbread cookies for the crust. I think it could use a little more rum flavoring, but still great just as the recipe is written.
