Mom's Chocolate Chip Cookies

I have been making chocolate chip cookies for years - is there any better cookie? :) I normally just grab a bag of chocolate chips and follow the recipe, but this time I wanted to try something different. I found these and I will never make another type of chocolate chip cookie ever again! I cooked the cookies until the edges were just browned and they are sooooo moist! I used french vanilla pudding mix this time, but the next time I will try another flavor of pudding mix. GOOD STUFF!!!!

General Tsao's Chicken

This was so good! I followed the recipe exactly, and it worked out well. Next time, as a time saver, I will omit the coating and frying of the chicken, and just pan fry the chicken without the breading. This was easy and simple to make. The entire time I was making this dish, I kept telling myself that the dish was going to turn out bad, but it did't! I surprised myself, and don't become alarmed if the chicken looks like goo, it works out! In short, followed the directions exactly and loved every last bite. After adding the sauce to the wok, I did have to add water. LOVED IT, LOVED IT, LOVED IT!!

World's Best Lasagna

In addition to the sweet Italian sausage, I also add 1 lb of hot Italian sausage. I have ditched my grandmother's recipe in favor of this one. Everytime I make this recipe, it is a HUGE HIT! LOVE IT, LOVE IT, LOVE IT!!

Oven-Fried Chicken

My family and I really enjoyed this recipe. The baking mix was a good idea vice breadcrumbs. I used chicken breasts and added seasoning salt, pepper, and garlic powder to the baking mix. The last 20 minutes I turned up the temperature to 375 to make sure the breading was crispy.

Shepherd's Pie VI

Wasn't too sure about the whole mashed carrots, but it worked. Like so many others had suggested, I used 1/4 cup Worcestershire sauce while cooking the meat. I omitted the beef broth, but added 1 cup of water and an envelope of brown gravy mix. I also increased the ketchup to 1/4 cup, and added garlic powder. The next time I will add some corn (always crave corn with mashed potatoes). I actually served the corn as a side dish, but ended up mixing it all together anyway. I only had three potatoes, and that was plenty! Added more cheese too-I love cheese. There are so many different ways to adapt this recipe to your liking!

To Die For Blueberry Muffins

Oregon Salmon Patties

I used lemon juice instead of the juice from the salmon. I only used enough lemon juice to make the mixture moist. I also added garlic with the onion, and old bay seasoning and they turned out great! The lemon juice was a nice and not too overwhelming.

Holiday Dressing

Okay, so I am not a dressing lover, but my mother is. I made this dressing for Thanksgiving, and my husband did the drunken head-bob when I asked him if he liked it. For Christmas, I made it for my mother and raved about the flavor-she enjoyed it very much. I, however, think it is too moist, almost soggy. So the next time I make this I will omit about 1/4-1/2 cup of the broth. I also cooked it at 350 for 1 1/2 hours (I have a gas oven).

Classic Peanut Butter Cookies

These cookies were good, not THE BEST EVER, but very good. Following the advice of others, I added 1/2 cup more of peanut butter and flower. I don't know how the addition of these ingredients helped or hurt these cookies.

Chicken Tortilla Soup III

This has a great flavor! Makes a lot, so be prepared for leftovers, but this recipe is so versatile, that I used the chicken for quesadillas the next day, and rolled in corn tortillas for chicken enchiladas the day after that. The kids loved it, and as a parent, there is no better review than your kids saying, "...I like this chicken mama..." I also used 2 cups of milk and 2 cups of half and half, I also used an entire jar of salsa (about 17 ozs). This will become a staple in my household! Five stars-good stuff.

Grilled Stuffed Swordfish

I wish I could give this recipe more than five stars! I used spinach for the stuffing as others suggested, and it tasted great. This was simple and the result was amazing! My children even enjoyed the taste of this fish-sooooo good!

Spiced Pumpkin Seeds

Just like my mom used to make when I was a kid...for those who want some extra spice...add some red pepper or more salt. This is good stuff, and so easy. It did take longer than 1 hour, just check it every so often.

Cucumber Sandwich

This is a GREAT sandwich!! I used an entire avacado vice just half (I love avacado). I also took others advice and used only 1 teaspoon of oil and vinegar. I have passed along this recipe to my mother, and she loves it too!!
