Baked Soy Lemon Chops

Reviewed: Jul. 13, 2012
This is very good! I marinated for 3 hours and baked for 30 mins. Reduced the soy sauce by a 1/4 and used EVOO instead of vegetable oil. Super easy to prepare.

Lite Italian Salad Dressing

Reviewed: Feb. 16, 2012
I made two servings for myself which was the perfect amount. Omitted the corn oil because I don't have it but it was still delicious. Will definitely be making this often.

Shredded Brussels Sprouts

Reviewed: Nov. 2, 2011
After reading the reviews, I used less pine nuts and threw a little EVOO in. I also threw in some red pepper flakes because I like spice, more salt (1/2 tsp is not enough for my taste buds) and used turkey bacon. The easiest and best way to shred the brussel sprouts is to throw them in a blender on the lowest setting, about 5 at a time. I kept eating them as I was cooking them so that must tell you how delicious they are!

Cajun Chicken

Reviewed: Mar. 19, 2012
Very quick and simple to prepare. I used EVOO instead of vegetable oil. Baked thin cut breasts for about 20 mins @375, but 15 mins would have been better. Yum!

Beer Lime Grilled Chicken

Reviewed: May 8, 2012
I added more garlic and some red pepper flakes and marinated overnight. Since it was about to rain, I grilled them early, put in a baking dish and poured some of the marinade over the chicken (thighs). I'm glad I did this because it rained right after I grilled! Refrigerated and then baked at 375 for about 20 mins to heat them up, turning once. Turned out juicy. Yum!

Pork Chops Italiano

Reviewed: Feb. 22, 2012
I've made this a quite few times so now I know what changes need to be made. I make 2 chops but use a whole can of tomatoes. There just isn't enough sauce and adding water dilutes it so use more tomatoes, about double the amount. The cook time is way too much. I seared 2 mins on each side. They should be brown but not fully cooked. Simmered for 15 mins, not 45 and another 5 after adding the mushrooms and bell pepper. Added more mushrooms to make it a whole meal so I didn't have to make a side of veggies. Granted, if you use really thick chops, you may want to simmer them longer but I would't suggest 45 mins. I also throw in some red pepper flakes to give it a little kick. Not necessary because the sauce is delicious but I wanted some spice.

Beer-Boiled Shrimp

Reviewed: Jan. 3, 2012
Very good basic recipe. For 2 servings, I added 2 cloves of garlic, 1/2 tbs of old bay and 1 tsp of red pepper flakes. I used 3/4 stick of butter and covered the pot when I turned the heat off.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Reviewed: Jun. 5, 2011
WOW! OMG! My husband and I thought these were the best ribs we've ever had! The sauce is phenomenal and the ribs fell rght off the bone. It was my first time making them but they were way better than any restaurant quality ribs I've ever had. Follow the recipe EXACTLY. I was hesitant about the amount of red pepper but I followed it and didn't regret it. It's not really spicy, comes out more tangy with a hint of spice. If I could give this recipe 10 stars, I would! Thank you Scott Hibb!

Mushroom Pork Chops

Reviewed: Apr. 11, 2011
Really good. I think I browned the chops a little too long (4-5 mins each side, thick & boneless) because they were dry so next time, I will brown them for about 2-3 mins on each side and add a little salt & hot peppers to the mixture (because I like spice). I also did what others recommended: seasoned chops in EVOO & placed in glass baking dish - sauteed onions, 3 cloves of garlic & mushrooms - mixed cream of mushroom soup with 1/2 cup of milk and 1/2 cup of white wine and poured this mixture over the browned pork chops & veggies. Baked at 375 covered with foil for an hour. Served it over brown rice.

Broiled Tilapia Parmesan

Reviewed: Jan. 7, 2012
My husband and I love this recipe! It's surprisingly quick and easy to prepare. My supermarket didn't have tilapia so I used flounder instead and it came out wonderful. I added another 2 tbs of parm because I didn't think I'd have enough to cover the fish and I'm glad I did. I broiled them exactly 2m-2m-2m and the parm came out perfect, a little burnt. I will definitely be making this often.

Grilled Potato Skins

Reviewed: Jun. 13, 2011
Very good and pretty easy to make. I followed the recipe exactly. They didn't turn out as crispy as they should have been but that's probably because I have an electric grill. I used the biggest potatoes I could find, they were probably more medium-sized not large so they were a little too salty.

Baked Chicken and Zucchini

Reviewed: Feb. 5, 2013
I usually skip breading altogether so next time, I won't bread the chicken (used thighs), but it was very good. Used a can of diced tomatoes (didnt have fresh), added mushrooms and red onion (didn't have enough zucchini), sprinkled crushed red peppers and some more salt and pepper on the veggies. If you don't add a little salt and pepper to the veggies, it might be a bit bland and I loathe bland veggies. Realized I only had about 1/2 cup of mozzarella but it worked out fine. Loved the flavor.

Grilled Brown Sugar Pork Chops

Reviewed: Jun. 27, 2012
I accidentally threw everything into the pan at once but it still turned out fabulous! The adjustment/substitutions I made were I cut back on the brown sugar a bit since some reviewers mentioned it was too sweet, used a dash of grated fresh ginger (thank God I had it!) because I realized I was out of ground, and apple sauce because I realized I also didn't have juice. My husband raved how delicious the sauce was! I hate making changes but you do what you have to do.

Kay's Spaghetti and Lasagna Sauce

Reviewed: May 7, 2012
A little bland. I used 1.5 tbs of sugar and really liked the sweetness, but my husband said he could do without it. I had to add more basil and oregano, also added some red pepper flakes. I loath bell peppers so used mushrooms and turkey instead of beef. Next time I will only use 1/2-1 tbs of sugar and add more garlic. After the additions, the sauce turned out very amazing.

Accidental Fish

Reviewed: Mar. 31, 2012
This is okay. I used cod and cut back on the butter by adding EVOO. The sauce still turned out too buttery. Also added more hot sauce because two drops isn't enough. Not my cup of tea.

Garlic Chicken

Reviewed: Mar. 20, 2012
SO GOOD! I added more garlic (because I'm obsessed with it), minced it with a grater into the EVOO so that the garlic would coat the chicken, which it did perfectly. Sprayed a very light layer of olive oil onto the baking dish because I didn't want the crumbs to stick to it, then lined a light layer of bread crumbs over that. Baked for a total of 35 minutes @ 375. It turned out crunchy and moist. So easy to prepare!

Modenese Pork Chops

Reviewed: Mar. 19, 2012
Very good. Used half the listed butter and the other half EVOO, also doubled the garlic. Sauteed the chops 3 mins each side. 20 mins was too much time to simmer because they turned out dry, next time I'll simmer for about 10-15 mins. The sauce was really tasty but had to add more wine.

Baked Halibut Steaks

Reviewed: Jan. 30, 2012
I've made this many many times because it's healthy and simple. You can use just about any type of white fish besides halibut such as sea bass, tilapia and cod. It tastes delicious with all of them. I always use more veggies than suggested, such as adding mushrooms and doubling up on the rest so I have to add more salt and pepper, about 1.5 tbs for 2 servings and I add rep pepper flakes because I like spice. If you plan on using this dish as a whole meal, then I would suggest doubling up on the veggies, salt and pepper. I can see why people would think it's bland because it's lacking enough seasoning for my taste, which is why it gets 4 instead of 5 stars.
