Stuffed Zucchini with Chicken Sausage

Given all of the reviews about there being too much spice and filling, I adjusted accordingly. I used 3 large squash and cut them in half so I was able to use up all of the mixture (baked plain for about 12 mins to soften them, as suggested). I too was confused with the directions to cut 3/4 slices, so instead used some of the flesh and the ends. I like spicy foods (not super spicy) so I bought hot & spicy Italian chicken sausage and only used 1/2 tsp of red pepper flakes. This was hot enough for me. If I had bought sweet Italian sausage, I would have used about 1 tbsp. 2 tbsp would have been overkill. Grilled them for about 25 mins. Very tasty, will make again.

Baked Chicken and Zucchini

I usually skip breading altogether so next time, I won't bread the chicken (used thighs), but it was very good. Used a can of diced tomatoes (didnt have fresh), added mushrooms and red onion (didn't have enough zucchini), sprinkled crushed red peppers and some more salt and pepper on the veggies. If you don't add a little salt and pepper to the veggies, it might be a bit bland and I loathe bland veggies. Realized I only had about 1/2 cup of mozzarella but it worked out fine. Loved the flavor.

Spicy Garlic Lime Chicken

I've made this a few times and honestly, this is amazing! You may want to double up on the spices, really good but not enough. It's great as is but I prefer baking it at 375 for about 40-45 mins, less messy. I also prefer boneless thighs over breasts because they're juicier. Since I bake them, I put tiny dots of butter under each thigh along with the evoo, added fresh diced garlic on top and some red pepper flakes. Forgot the lime juice last time but it was still delicious.

Garlic Green Beans

I've made this many many times. It's delicious and easy as written but you can also make adjustments (after trying as is) by adding almonds or doing without the butter. I either use fresh green beans or the bagged ones.

Artichoke and Sun-Dried Tomato Chicken

Good as is but better with tweaks (as many have suggested). Cube the chicken before you saute with garlic, onions, red pepper flakes and herbs. I could only find crushed tomatos with green peppers, onions and celery but it worked out great. Also, couldn't find sun-dried pesto so got sun-dried garlic (don't like pesto anyway). I marinated frozen artichokes with my own recipe (this takes up more time so buy them pre-marinated if you can) and served over orzo (or pasta). Yummy. 5+ stars with tweaks.

Tomato Basil Pasta

I was pleasantly surprised at how great this was and I even used gluten-free penne pasta! I did add a bit more garlic, basil and some red pepper flakes for heat but it would still be great without the additions. I'm so glad I tried this recipe. It's super easy and quick to make. Good with shrimp. The only change I'll make for next time is I'll saute the onion and garlic because my husband doesn't care for them raw.

Baked Soy Lemon Chops

This is very good! I marinated for 3 hours and baked for 30 mins. Reduced the soy sauce by a 1/4 and used EVOO instead of vegetable oil. Super easy to prepare.

Yummy Honey Chicken Kabobs

Grilled Lemon Yogurt Chicken

Used thin cut chicken breasts. Didn't have harissa so used tobasco instead. I was very hesitant with this recipe but I'm glad I tried it because it's very good. What sold me was the dipping sauce. It gets to be a little much after a while but if you dip lightly, it should be fine. My hubs enjoyed it (and he's not a fan of greek yogurt), rated it a 4 but I would rate it a 4.5. If you despise the taste of plain greek yogurt, then you may not like this. I used up a yogurt brand that I'm not fond of because it was sitting in my fridge, but I still enjoyed it.

Grilled Brown Sugar Pork Chops

I accidentally threw everything into the pan at once but it still turned out fabulous! The adjustment/substitutions I made were I cut back on the brown sugar a bit since some reviewers mentioned it was too sweet, used a dash of grated fresh ginger (thank God I had it!) because I realized I was out of ground, and apple sauce because I realized I also didn't have juice. My husband raved how delicious the sauce was! I hate making changes but you do what you have to do.

Oven-Barbecued Pork Chops

YUM! I marinated everything for a couple of hours. The only changes I made were I doubled the chili powder, which wasn't spicy and added 2 cloves of garlic. Next time, I'll add red pepper flakes. Used 2 bone-in chops and baked for about 32 mins, turning once. I don't have a cast iron skillet so I just used a glass baking dish.

Lemon Garlic Tilapia

Used Dover Sole and totally overcooked it because it's a much thinner fillet. I only baked for 20 mins but 10 would have been better. Only used tiny dabs of butter and placed on top of the fish because my hubby hates butter on fish and used EVOO. Had to add some salt. Pretty good though.

Lemony Chicken with Artichoke Hearts

I think it's good but my hubby thought it was great. I had to add more salt because it was a little bland to me. Also added some red pepper flakes and mushrooms. Used white wine instead of vermouth. Served it over rice.

Easy Tilapia with Wine and Tomatoes

Really good. I reduced the butter and added some EVOO. Because it was raining, baked at 350 for 30 minute but could have baked for less. Next time, I will add some red pepper flakes.

Beer Lime Grilled Chicken

I added more garlic and some red pepper flakes and marinated overnight. Since it was about to rain, I grilled them early, put in a baking dish and poured some of the marinade over the chicken (thighs). I'm glad I did this because it rained right after I grilled! Refrigerated and then baked at 375 for about 20 mins to heat them up, turning once. Turned out juicy. Yum!

Kay's Spaghetti and Lasagna Sauce

A little bland. I used 1.5 tbs of sugar and really liked the sweetness, but my husband said he could do without it. I had to add more basil and oregano, also added some red pepper flakes. I loath bell peppers so used mushrooms and turkey instead of beef. Next time I will only use 1/2-1 tbs of sugar and add more garlic. After the additions, the sauce turned out very amazing.

Accidental Fish

This is okay. I used cod and cut back on the butter by adding EVOO. The sauce still turned out too buttery. Also added more hot sauce because two drops isn't enough. Not my cup of tea.

Garlic Chicken

SO GOOD! I added more garlic (because I'm obsessed with it), minced it with a grater into the EVOO so that the garlic would coat the chicken, which it did perfectly. Sprayed a very light layer of olive oil onto the baking dish because I didn't want the crumbs to stick to it, then lined a light layer of bread crumbs over that. Baked for a total of 35 minutes @ 375. It turned out crunchy and moist. So easy to prepare!

Modenese Pork Chops

Very good. Used half the listed butter and the other half EVOO, also doubled the garlic. Sauteed the chops 3 mins each side. 20 mins was too much time to simmer because they turned out dry, next time I'll simmer for about 10-15 mins. The sauce was really tasty but had to add more wine.

Cajun Chicken

Very quick and simple to prepare. I used EVOO instead of vegetable oil. Baked thin cut breasts for about 20 mins @375, but 15 mins would have been better. Yum!
