I'm an a retired US Marine who now enjoys cooking for myself and my lovely wife here in Beautiful Lake Havasu City AZ. We try to cook and eat healthy, however, my family is Sicilian and we eat good and not always the most healthy. My family owned an Italian restaurant in St. Louis Missouri when I was young so I prefer to cook authentic Italian and Sicilian meals.
My favorite things to cook
I enjoy cooking anything Italians, pastas, meatballs, sausage dishes, however, we really enjoy fish and you will find that in the majority of our dishes.
My favorite family cooking traditions
My mother used to spend a couple of days making authentic spaghetti sauce. Fresh tomatoes, onion, chicken, sausage and Italian meatballs. She was very particular about her ingredients, seasonings, etc.
My cooking triumphs
I'm now able to boast that I make meatballs as good or better then my mother.
My cooking tragedies
I tried my hand at baking once...once! I learned the hard way that when you make a banana pie your actually suppose to bake the crust before you fill it. That was embarrassing!

Shepherd's Pie
This was good, however, I would not make the mashed potatoes like this recipe calls for. One I didn't feel there was enough potatoes and they just were not that good. Make your instant potatoes as normal and I'd go with two cups cooked.

Asian Avocado
I did this just a little different. I scooped out all of the inside that I could, sort of like a twice baked potato. Then I mixed the garlic, ginger, soy sauce and the avocado together and placed it back into the avocado skin. We enjoyed it and so simple to make.
