I planned to serve this at a dinner party for 10, but I learned that the guest of honor doesn't like salmon. So, I substituted Chilean sea bass. It was a hit!!! Absolutely delicious. That same guest of honor doesn't like mustard either, but she had no idea that there was mustard in the recipe. She has raved about it to others and she wants the recipe. Really superb . . . I wish I had leftovers. I can't wait to make it again.

Classic Spanish Sangria

Corn Dip

Everyone enjoyed this dip . . . no one could eat just one chip/frito with this dip. The recipe makes a very large quantity though. Next time I think I would cut the recipe in half.

Mexican Chicken Kiev

This is marvelous. I served it with Mexican Vegetable Rice (submitted by Michelle Young), Mexican Corn (submitted by Karen Baldridge) and some sauteed peppers. My guests loved the meal, I did too!!

Mexican Vegetable Rice

I made this rice without the frozen vegetables and I added some more tomatoes. I served it with Mexican Chicken Kiev, Mexican Corn (submitted by Karen Baldridge) and some sauteed peppers . . . My guests loved the entire meal. The leftover rice was great with eggs too.
