Thumbprint Cookies IV

I made these cookies for a special event at church, and I must say, I was disappointed. The cookies took at least 10 minutes to get even slightly brown, and I didn't roll them in nuts because the nuts weren't listed in the ingredients. I put the jam in before baking, and I think that worked out fine. Unfortunately, I thought the cookies were OK but sort of tasteless. I probably will look for another recipe before making these again.

This was very good and many of the guests enjoyed it, but I thought it was a little dry. Will probably add a bit more liquid next time. Otherwise, great flavor!

Eggless Tofu Spinach Quiche

This was absolutely great! I converted it to vegan by using soy milk and vegan cheese, and it was wonderfully delicious. I agree that no one would know it wasn't "the real thing!" This will become a family regular: thanks!

Cold Fruit Explosion Soup

This was very nice, but I was surprised that even with the ginger it seemed bland. However, I did add a good amount of cinnamon, and after that, it was very good.

Mango Pineapple Salad with Mint

I gave this recipe to my friend to make for our church's recent Hawaian party and it went over very well. She used canned pineapple to save money and also added some fresh peaches, and everyone loved it, especially the mint taste. An additional adaptation which she did was to use craisins instead of dried cranberries, and she soaked them in the juice from the canned pineapple. The whole thing was a big hit!

Coconut Pie

I made this pie three times, twice without chocolate chips, and once with. Each time, I had to cook it longer than the recipe said. The second and third time, I cooked it at 325 instead of at 300, and that seemed to work better. The second and third time, I used 3 TB of flour instead of 2, and that seemed good. Also, I used dark chocolate chips, and they made a delicious bottom layer! Great recipe!!

Spinach Tomato Tortellini

I made this for a company dinner when I had very little time after work, and we all loved it. As others have said, it is very easy and also delicious. I did add more Parmesan cheese to the sauce, which was delicious. I baked sweet Italian sausage with garlic, green peppers and onions at 400 degrees for about 30 minutes and served it on the side with the Tortellini. Perfect!!
