To Die For Blueberry Muffins

Delicious! But I found myself picking off the topping because it seemed like too much. Next time I made them, I halved the topping ingredients and was much happier with the result.

Whole Wheat Zucchini Chocolate Chip Muffins

I made the same substitutions as chefshan (whole wheat flour, applesauce, less sugar) and also used pecans in place of walnuts. These are the best muffins I've ever had.

Cranberry Sauce

When prepared as written, the result was the consistency of simple syrup, even after refrigerating overnight. I dumped it back into a saucepan and simmered it for a couple of hours (which was probably overkill), then popped it back into the fridge for an hour, and the final result was as thick as the whole berry canned variety and delicious to boot! Next time, I'll try halving the orange juice amount as suggested by other comments.

Buttery, chewy, and delicious! I use AirBake insulated pans and found I had to increase the bake time 2-3 min. to get them lightly toasted, otherwise I followed the recipe exactly.

Easy Indian Butter Chicken

This recipe is FABULOUS - even better than my local Indian restaurant! It has just enough kick to be appropriate for the whole family. I grilled the chicken and cut it into bite-sized pieces the night before. The next day, I caramelized the onions and garlic, shook the cooked chicken with tandoori masala in a plastic bag to coat it, then threw everything in a slow-cooker on low and didn't touch it for four hours. At dinner time, I gave it a thorough stirring and served over basmati rice - yum! This will now make regular appearances on my family's menu.

Maple-Garlic Marinated Pork Tenderloin

I don't usually like the taste of pork, but this recipe makes tenderloin grill up fork-tender and with an Asian-style taste. Paired with grilled sweet potatoes and roasted corn on the cob, this made for an easy Sunday-quality dinner cooked completely outside while sitting and enjoying the view from the deck. My husband, teenager, and toddler all loved it.
