Shepherd's Pie VI

This was good. I added a package of brown gravy mix, frozen peas, carrots, bean, corn mixture, onion and about 1/4 cp of worsh sauce. It was yummy on a chilly night.

Taco Pie

The crust was really good. Baked it in a 9/13 pan. Mixed in a can of refried beans and green chilis with the hamburger as well. The family loved it.

Seafood Stuffed Avocados

I loved this. Made it last night as an appetizer for Valentines Day. I used imitation crab because my son is allergic to real crab. I added chopped avocado and used ranch instead of mayo. I also squirted a little fresh lime juice in it. The cucumbers really made this recipe. It was light and fresh and I will definately make this again! Thanks for sharing.

House Fried Rice

This recipe is great. However, I didn't add any of the meat. I love letting the rice "fry" a little to get some crispiness. Very good. Thank you.

Vanilla Pumpkin Pie

I will give this 3 stars because my husband loved this recipe. I didn't at all. I added potatoes, carrots, and onions. Maybe I shouldn't have because the beer taste was so overpowering even throughout the vegetables. When I walked in the door after work, the house did not smell good at all like it normally does when I use the crockpot. The taste was just too overpowering. I did like the cooked pepperchini's though. That was something I have never had before. Thanks for the recipe. This one just didn't do it for me at all.

Spring Strawberry Spinach Salad

This was wonderful. As suggested, I used only 1/3 cup of sugar, added a couple of strawberries to the dressing and used red wine vinegar instead of white. Great summer dish! Thanks.

Curried Coconut Chicken

This was fantastic. Very similar to what a restaurant serves here in Boulder. The only changes I made was that I added thinly sliced carrots and sliced celery (both about 1/3 cup) with the onion. However, I was out of onions and used a scallions instead. I served this over an aromatic white rice that my brother gave me from Carolina. It was perfect! Wonderful recipe. Thank you for sharing!

Tommy's Ham Casserole

This one is a keeper because my kids liked it so much. I used shell macaroni, a full can of milk (and then some), about 1 1/2 cups of cheese, and about 1/3 cup diced celery. Everything else was per the recipe. When I served it, I put green tabasco on mine and it was delish! Thanks!

Hamburger Soup II

I thought this was really good. I added two cans of tomato soup, 1/2 can of water and 1 can of beef broth. Once it was all done, I poured it over rice to make it more of a casserole consistancy. Also used frozen corn instead of peas. Oh, I also used taco seasoning when browning the meat. I cooked it on low for 11 hours and the potatoes were still not done, but they were close. I cubed them, but next time I will even make them smaller. Very good. Thanks for sharing!
