Zucchini Cobbler

Yummy! I had some zucchini from the garden and wanted to try something different. My whole family loved this. It's tart and sweet. I wanted to add oatmeal to the crumbs but didn't have any, and I used brown sugar instead of white.

Rocky Road Popcorn Balls

I made these for my boys, but my husband and I couldn't leave them alone! I mixed the chocolate chips in with the melted marshmallow because I thought it would be difficult to stir chocolate chips in with the sticky popcorn. It is very messy and hard to stir. I also chopped my peanuts up, and I put wax paper on a cookie sheet to place the balls on and let them cool before wrapping them. I think I will try adding some peanut butter to the marshmallow/chocolate next time. My kids loved it!

Apple Jicama Coleslaw

Maybe I should be more generous with my rating given the fact that I substituted yogurt for mayo and I don't know what corn bits are, however, even with those ingredients I don't know if we would have liked this. We'll stick to regular coleslaw. Ingredients are cheaper anyway. It just didn't have a great flavor and I even added more of everything to try to make it taste better. No luck. I think my other mistake may have been putting it in the processor instead of chopping it, but that still shouldn't affect the flavor. Hubby said "never make this again!"

Spinach Brownies

I made this tonight to go with our chicken and some oven baked parmesan potatoes. I used 2 packages of frozen spinach instead of fresh. I just thawed it out and drained it, didn't cook it first. I sauteed the onion in a little olive oil and then added 1/4 C butter, and once it melted I mixed that in with the other ingredients. I also added some garlic powder. Yummy!!

Tina's Best BBQ Lime Chicken

I tried this over the weekend at our first summer cook out. I marinated the chicken the day before and did as instructed, poking the chicken with a fork. Wow! It's yummy and the lime will make your cheeks pucker! I'm making it again this week.

The Best Lemon Bars

These are sooo easy and good! I made them for a back yard BBQ and there were none left by the end of the day! One friend confessed that she ate 4 of them! I am making them again this week for another BBQ. I hope I have some leftovers this time. Oh, and I followed the recipe exactly, no substitutions or changes.

Fluffy Whole Wheat Biscuits

I had some chicken and gravy left over from supper last night, so I decided to make some biscuits to finish it up at lunch time. These were fast and easy to make. I followed the recipe exactly and baked for 12 minutes. They aren't "light and fluffy" like regular biscuits because of the whole wheat flour, but I like whole grain bread, so I'll definitely make these again. My boys asked for a plain biscuit after they ate their lunch.

Cheese's Baked Macaroni and Cheese

This is my go-to recipe for baked mac and cheese. I make it plain sometimes, and other times I add smoked sausage (that's what's in the oven right now). I use a combo of cheeses, too. Colby jack and cheddar is good. I did use a whole box of macaroni (this one was a little over 14 oz).

Ruth's Grandma's Pie Crust

Delicious!!! I try to stay away from using shortening, but when it comes to pie crust I just have not found anything that makes crusts so well. This recipe is awesome. I have never had much luck making pie crust; it is always too dry or something, and never looks nice. I have made this several times, first for cherry pie, and second for chicken pot pie. I just love it, and it will be my favorite recipe from now on. I don't even worry about having cold shortening and water. I just mix it all together and roll it out right away; no fuss!

Chicken Potpie

I made this last night for some friends who were coming for dinner. I had chicken already cooked. It was time consuming, but things like this usually are and it's worth the time. I followed the recipe pretty much the way it's written except that I used basil instead of thyme. I used the pie crust recipe on here "Ruth's Grandma's Pie Crust" which I had tried before for cherry pie. I made 1 1/2x the crust recipe to have enough for 2 pies. I ended up having extra filling and extra crust, enough to make a mini pie for my husband to take to work. Everyone raved! The filling is very rich and flavorful, and although the butter and shortening are not the healthiest, this will be my go-to pot pie recipe!

Banana Sour Cream Bread

This recipe isn't better than the one I normally use, but it's really good. I wanted to try it with the sour cream and it turned out wonderfully. I halved the recipe (used 2 eggs), and used 1 C whole wheat flour and 1 1/2 C white flour. It is very moist. I have some more ripe bananas so I may just make a couple more loaves for in the freezer.

Yellow Clooney Cake

A friend of mine asked me to make a half sheet cake for her daughter's birthday, and being the fearless baker that I am, I decided to try a new recipe. I used this one and got rave reviews. I doubled the recipe and had enough for some cupcakes because it does make a lot of batter. It was yummy! I am used to making things from scratch and much prefer the taste of home made cakes to store bought, and apparently so did everyone at the party! I'm actually baking a 13x9 right now!

Honey Baked Chicken

Very easy to make. I just poured the sauce over the chicken and baked it at 350 for maybe 45 minutes, and I turned the chicken a couple of times. Very good over rice. My MIL was over for dinner and she loved it! This is one of my new favorites. I was out of regular mustard so I used Dijon and it was fine.

Serbian Ground Beef, Veggie, and Potato Bake

I made this tonight and it was really good. It reminds me of Greek moussaka because of the cinnamon in the meat. I love that! It's a very flavorful, spicy, dish but I have to agree with others that it seems to be missing something, and what that something is I am just not sure. But I will make this again! I doubled the recipe but cut back on the black pepper and I forgot to put in the green pepper. Delicious, and my 4 and 3 year olds ate it up!

Quick Peanut Butter Cookies

I'm not sure how to rate these because I changed the recipe, but I don't think they would have been as good. I used natural peanut butter which is much more dry than the regular stuff, so I added an extra egg. 1/2 brown sugar 1/2 white, and 1/2 C. gluten free flour mix (made from white rice flour, tapioca flour, and corn starch), a pinch of salt and no soda. I rolled them into balls, flattened with fork, and popped them in a 350 oven for 10 minutes. They're not bad, and they're quick to make. I think next time I'll try making them with butter and more flour like I normally do.

David's Yellow Cake

I doubled this recipe to make a 1/2 sheet cake for my son's birthday. It's delicious! I followed the recipe exactly, making sure my ingredients were room temp, beating my butter and sugar very well until it was fluffy, slowly adding one egg at a time, and alternating the flour and milk a little at a time. I baked for 40 min w/ a heating core and it's perfect. I will use this recipe again! (oh, and I made an egg white omelet for lunch in case you're wondering what to do with all that egg white)

Simple Sweet and Spicy Chicken Wraps

I made this for supper and it was really good, but too hot. I will cut back on the pepper next time. My two sons were chugging milk! I think that using the medium salsa in the chicken is enough hotness where the cucumber sauce already has 1/2 tsp of pepper. Other than that, I'll definitely make this again!

Jambalaya Casserole

I made this tonight for dinner and it was so good! I ate way more than I should have. I threw in a sweet red pepper, used andouille sausage, and left over roasted chicken. I added about a Tbsp. of Creole seasoning, left out the hot sauce, and didn't use browning sauce. I also used 1 C of olive oil and only 1/4 butter. I didn't see the need to bake this and simply cooked the veggies in the oil/butter in a huge stock pot until tender and then added the rest of the ingredients. It simmered for about 45 min. So, so good.

Buffalo Casserole

I made this today for dinner. It's really tasty but it got a bit dried out. Some of the rice was a tad bit crunchy yet but I didn't want to bake it any longer. I didn't have onion powder so I minced up some onion, and I only put 2 Tbsp hot sauce because of my kids (hubby and I added more Franks Red Hot to our plates). I used neufchatel cheese instead of cream cheese and mixed light sour cream with a little regular. This would be pretty fattening to eat all the time but I will make it again! Very good.

Lemon Pudding Cake II

I had one lemon left and wasn't sure what to do with it when I came across this recipe. I followed the recipe exactly and topped it with freshly whipped cream. It is really yummy! I love anything lemon and it's not an overpowering lemon taste. I used all of the zest from the lemon and the juice I got was a little less than the 1/4 called for. My husband and kids love it, so I will definitely make this again.
