Eileen's Meatloaf

I made this for a couple of non-meatloaf believers and it was so delicious, they were converted!! I did tweak the recipe a little like a few others did, I used 1/2 cup sour cream and 1/2 cup ranch. I also made a glaze of ketchup, brown sugar, and minced garlic. I couldn't find italian breadcrumbs at the supermarket for the LIFE of me, so I ended up crushing some crutons, and it worked just fine. SUPER DELICIOUS!!!

Roasted Rack of Lamb

I used lamb chops with this recipe. At first i was worried that it wouldn't work, but they were delicious. I browned the chops, brushed with mustard, then rolled the edges of the chop in the breadcrumb mix. I baked them at 400 degrees for about 8-10 minutes, until they were medium. Put it atop baby red garlic mashed potatoes, sided with sweet corn and a strawberry almond spinach salad. The breadcrumb edges gave the perfect amount of seasoning and crunch, and the mustard gave it just a touch of tang. Possibly one of the best meals I've ever made.

Turkey Tortilla Soup

This recipe was SUPER tasty! Honestly a great way to deal with turkey leftovers after Thanksgiving. It tasted even better when I had it the next day!

Baked Dijon Salmon

WOW! This was amazing!! The only changes I made were adding about a teaspoon of garlic to the honey mustard mix as well as adding some salt and pepper. I took the advice of another reviewer and tasted the mixture before putting it on the salmon. Great tip! Definitely will be making again. Thanks Esmee!
