Barley and Mushrooms with Beans

This is a great GOOD CARB recipe. Barley and beans are good carbs. Great for diabetics! You could add cubed chicken or turkey sausage for a one dish meal. You could also add tomato juice along with chicken stock. Thanks for a great recipe.

Thanks Arliss! I took the advice of other reviewers and added celery and garlic and a little minced ginger. I have been searching for this for a long time. Can also use crabmeat or just veggies and low sodium soysauce. Great!

Chocolate Cheesecake II

OMG! This is a wonderful cheesecake! The topping makes it. I used splenda and lowfat cream cheese and baked it in a water bath. I sprinkled chopped pecans on top. I will be making this again for New Years Day. Thanks Diane!

White Chocolate Cheesecake with White Chocolate Brandy Sauce

I made this for my husband's office party. I used splenda and low fat cream cheese. I made a chocolate cookie crust and raspberry sauce as a side. I also had him take chocolate syrup as an alternative to the raspberry. I did not try the brandy sauce as it was inappropriate for his office. The cheesecake turned out perfect. I will make it again for Christmas Day.

Dirty Martini

Wow! Hank, one of the reasons I like Vodka over gin is the taste aspect. I love olives and the sourness of the brine is great even with gin. I use blue cheese stuffed olives for special dryness. Hard for me to slowly sip this one.

Dressed Up Brussels Sprouts

Probably not many people like brussel sprouts but we do and this is a great lowfat, low calorie recipe if you use turkey sausage. You could also use cabbage and some canned new potatoes for a great one dish meal. Thanks for this great recipe.

Coffeebar Chai

Chai Tea Mix

My daughter and I were served Chai by mistake in a coffie shop. We both loved it. Don't omit the cardamon. It is an essential ingredient for Chai. I also used splenda (2 C.) to cut down on the calories for me. I read all the reviews and took what I wanted to make it my own. Pumpkin pie spice was a good tip. Thankyou Jo, for a great recipe to make for yourself, family, or gifts.

Escarole and Bean Soup

It is hard to find good looking escarole where I live so I just substituted spinach. It was still wonderful and perfect for my husband who is a diabetic. All that fiber and protein, yum. Thanks for sharing.

Pumpkin Pie Cake I

I have made this 3 times and each time it was wonderful even using low fat ingredients. Try using different cake mixes as spice and caramel work really well with pumpkin. I will try carrot cake next time. You can even use 1/2 the cake mix and use the rest for muffins. You have to make sure the cake mix all gets wet. I am taking this along with traditional pumpkin pie for TG. Great recipe!

Pumpkin Pie Cake I

I have made this 3 times and each time it has come out perfect. I used Splenda instead of sugar, low fat condensed milk, and egg substitute. I have used a spice cake, caramel cake and yellow cake. I have tried just 1/2 the cake mix and used the other half for muffins because the first time I used all of it some of the mix was still powdery. You have to make sure most of the mix gets wet. Each time I made it everyone loved it. I am going to take it for our TG feast along with traditional pumpkin pie but I prefer this pie cake. Thanks for the great recipe!

Different Chicken Cordon Bleu

I used low fat soup, deli ham, low fat swiss and low fat sour cream to make it a little less cals. Used dry vermouth since I ran out of white wine. No salt, and a little afraid about the bread stuffing burning but it did not. I used stove top stuffing and baked it for 45 min. I also used 4 big chicken breast. My husband went nuts and praised me again for trying new stuff all the time. We loved it. Thanks for a great quick dish Jennifer!

Anthony's Chicken

This is great but at 1000 cals and 36 grams of fat it is way too much for me so I lightened it up by using ff dressing, light shreaded mexican cheese, and a bag of Hormel bacon bits. Also no butter or breading or you can use egg white and bread crumbs and a little olive oil to brown chicken breast or just brown them in cooking spray. Still turned out great and with a lot less calories and fat. This tasted great and my family loved it. Thanks Anthony!
