Classic Peanut Butter Cookies

I used salted butter and creamy peanut butter because that's what I had on hand. I quartered the recipe to only make one dozen. I didn't chill them, because let's get real - some of us can't wait that long. They were just right to handle. After I flattened them with a fork, I piled up a lot of sugar on top of each one and baked at 325 for 15 minutes because I like my cookies a little drier. They were perfect for my taste. Thanks!

Amish White Bread

For BREAD MACHINE users, just load in these ingredients in the same order as any recipe: water first; then flour, sugar and salt; (canola) oil in each corner; then yeast in the well in the middle. I just halved the recipe exactly. I had misplaced my amish bread recipe and was only looking for a list of ingredients. This is a good one for when you don't have perishables like butter and milk.

Chicken Stir-Fry

My stir fry has been much better since I have been coating my chicken in the corn starch as the recipe instructs. I didn't measure anything, but pretty much followed the recipe, substituting mushrooms and chinese cabbage for the celery and carrots. This is the only stir fry I use now.

Easy Mexican Casserole

I wish all meals were this tasty and simple. I had to use what I had on hand so I substituted nacho-flavored Doritos (not crushed), just enough to cover the bottom of a 9 x 9 pan, put 1/2 packet of taco seasoning with the meat, used black beans, added some black pepper. I didn't let my meat simmer for 20 minutes because I didn't want it to be too dry. It was deliciously spicy. I can only imagine how good it would be if I had actually had some sour cream, olives and onions to go in it. Oh my.
