German Potato Pancakes

These were great!!! I solved the oxidation problem by shredding the potatoes one at a time in my food processor and emptying it into a bowl of cold water after each potato. I had read that when making homemade french fries to put them in cold, even ice water and then dry them before frying. I then took a handful at a time and squeezed them in the collander and added them to the egg mixture. This worked great. There was no change in color, or if there was it was limited. Once dinner was over I quickly put the leftovers in plastic baggies and put them in the freezer, hopefully this will keep them from oxidizing. Thanks so much for this great recipe!!!

Chicken Flautas

This recipe was excellent. I agree with another reviewer, you do need a lot more oil, don't be afraid to use a lot, it really helps in softening the tortillas. I made a very small batch, and cooked it in an 8 x 8 pan, all crammed together, next time I think that I will use a cookie sheet, that has not been greased, since the tortillas have been dipped in oil you really don't need it. Doing this I am hoping that I will get them crispy all around, perhaps I will even turn them and bake them for a couple of extra minutes. Anyway the taste was great, and I will make again!!! I boiled my chicken breasts on the stove until just done and then shredded with forks, seemed to work just fine. Thanks for this great recipe!!!

Buffalo Style Chicken Pizza

I love making this, with these changes it is even better..... For the sauce use about 3/4 cup Franks Red Hot (or any other hot sauce), 1 tbl margarine, 1 tbl honey or sweet and sour sauce (to calm down the heat some) and a dash of garlic salt. Also you can't have chicken wings without celery, so why have your chicken wing pizza without celery??? I cut up 3 or 4 stalks. Building the pizza as follows... wing sauce (spread like pizza sauce), diced chicken, dollops of blue cheese (3/4 of a 16 oz jar), celery and then the mozzarella. If your oven is hot enough the crust will not be soggy. Thanks for the recipe!!!

Amazing Crab Shells

Everyone loved this great treat!!! I used sour cream instead of mayo as my Mom can't eat mayo. I also added some celery salt and lime juice. I will make this one again!!!

Hot Reuben Dip

I make this recipe using 1- 8 oz brick of cream cheese instead of the mayo and only 8 oz of sour cream. We also add 2 tablespoons of ketchup to get that thousand island look and taste. I also heat it in a fondue pot or small crock pot for about 2 hours on low before serving, instead of in the oven. Thanks so much!!!

Tropical Fruit Slush

If I could give it 10 I would. I did make one adjustment while cooking.....I boiled the simple syrup took it off the burner, cooled it for about 10 minutes, then I added the frozen orange juice concentrate to it. It cooled quickly and I was able to finish up.

Red and Green Christmas Jalapeno Jelly

If I could give this 10 stars I would!!! I printed the recipe 3 years ago...I better finally review it. I followed the recipe exactly except instead of green pepper I used red, yellow and orange all mixed together. I left in half of the jalapeno seeds for some heat too. I also add red food coloring to make it more festive.

Manicotti Shells

These were excellent!!! I mixed them up in the blender and poured into a nonstick pan. Cooked up perfectly. Everyone loved them at my impromptu dinner party. This will be made over and over in my house!!!

Breaded Chicken Fingers

WOW!!! Worth every second of work that I put into it!!! I took the advice of others and once I dipped them into the bread crumb mixture I redipped them into the marinade and then in the crumbs again. I used chicken tenderloins and marinaded them for 48 hours. EXCELLENT!! THANK YOU!!

Fudge Truffle Cheesecake

WOW!!! Amazing, light fluffy. I did a trial run for my Christmas presents by making cupcake sized cakes. I also used 1/2 of an Oreo as the base. It was perfect. I have made this several times now....I make sure that the ingredients are room temperature, I also bake for approx 55 min and then remove from the oven, run a sharp knife around the outside so it can shrink as it cools and then return it to the oven and turn the oven off so it can cool slowly. This is excellent and I even freeze it now, thaw slightly and then serve!!! Yummy!!!!

Banana Banana Bread

I just do not understand how someone who followed the directions to this recipe could say that it is dry!!!! It is excellent. Very moist, great taste and so simple to prepare. I have one more batch of bananas that are sitting on the counter, I can't wait until they are ready to go!!! Thanks for sharing this great recipe!!!!

This is very good, I doubled the wine and then added chicken bullion to it instead of chicken broth (cuz I didn't have any) I added a little more sour cream too. Made an excellent sauce. I served it over rice!! Thanks Alice!!!
