Amy's Garlic Egg Chicken

Reviewed: Nov. 1, 2002
Excellent!!! I let the chicken sit in the fridge for 1 1/2 days marinating!!! So good and tender, great taste too!!! I cut the breading in half and sprinkled the little that was left over onto the chicken, even after it had been flipped. This one is going out to friends tonight. Thanks so much!!!

WOW!!! Worth every second of work that I put into it!!! I took the advice of others and once I dipped them into the bread crumb mixture I redipped them into the marinade and then in the crumbs again. I used chicken tenderloins and marinaded them for 48 hours. EXCELLENT!! THANK YOU!!

Alice's Sour Cream Chicken Breasts

Reviewed: Dec. 7, 2002
This is very good, I doubled the wine and then added chicken bullion to it instead of chicken broth (cuz I didn't have any) I added a little more sour cream too. Made an excellent sauce. I served it over rice!! Thanks Alice!!!

Chicken Flautas

Reviewed: Feb. 1, 2003
This recipe was excellent. I agree with another reviewer, you do need a lot more oil, don't be afraid to use a lot, it really helps in softening the tortillas. I made a very small batch, and cooked it in an 8 x 8 pan, all crammed together, next time I think that I will use a cookie sheet, that has not been greased, since the tortillas have been dipped in oil you really don't need it. Doing this I am hoping that I will get them crispy all around, perhaps I will even turn them and bake them for a couple of extra minutes. Anyway the taste was great, and I will make again!!! I boiled my chicken breasts on the stove until just done and then shredded with forks, seemed to work just fine. Thanks for this great recipe!!!

Award Winning Peaches and Cream Pie

I was right!!!! The finished product is as delicious as the remains on the spatula!!!! This was great just out of the oven and chilled. Thank goodness tonight was not a night that we were having company for dessert as I would have had some explaining to do concerning the spoonfulls that were missing from the finished product!!! Thanks so much!!!

OH MY GOODNESS!!!!!! This is an excellent marinade!!!!!! I cut up a flank steak and marinated it all day, the meat was tender, and oooooooh so sweet!!! German Potato Pancakes

Reviewed: May 13, 2003
These were great!!! I solved the oxidation problem by shredding the potatoes one at a time in my food processor and emptying it into a bowl of cold water after each potato. I had read that when making homemade french fries to put them in cold, even ice water and then dry them before frying. I then took a handful at a time and squeezed them in the collander and added them to the egg mixture. This worked great. There was no change in color, or if there was it was limited. Once dinner was over I quickly put the leftovers in plastic baggies and put them in the freezer, hopefully this will keep them from oxidizing. Thanks so much for this great recipe!!!

Buffalo Style Chicken Pizza

Reviewed: Jun. 9, 2003
I love making this, with these changes it is even better..... For the sauce use about 3/4 cup Franks Red Hot (or any other hot sauce), 1 tbl margarine, 1 tbl honey or sweet and sour sauce (to calm down the heat some) and a dash of garlic salt. Also you can't have chicken wings without celery, so why have your chicken wing pizza without celery??? I cut up 3 or 4 stalks. Building the pizza as follows... wing sauce (spread like pizza sauce), diced chicken, dollops of blue cheese (3/4 of a 16 oz jar), celery and then the mozzarella. If your oven is hot enough the crust will not be soggy. Thanks for the recipe!!!

Hot Reuben Dip

Reviewed: Jun. 13, 2003
I make this recipe using 1- 8 oz brick of cream cheese instead of the mayo and only 8 oz of sour cream. We also add 2 tablespoons of ketchup to get that thousand island look and taste. I also heat it in a fondue pot or small crock pot for about 2 hours on low before serving, instead of in the oven. Thanks so much!!!
