About this Cook
I grew up in a big family. We grew all our own veggies and severl different fruits that my mom canned and froze.... we allways had fresh no matter what time of year. She made everything from scratch and I started at the stove cooking on my own when I was 7. The love of fresh ingredients has stuck with me. I hate canned veggies and don't know how people can eat them and enjoy them! I cook like my mom did - always from scratch, always fresh ingredients - is there any other way?
My favorite things to cook
In my younger years I found a love of italian food. I have perfected my pasta sauce, and make the most amazing lasagna - I have references. I generally like to cook home style regional foods - having lived all over the country, I have had the opportunity to learn many different cuisines, and incorporate that into my interpretation of the dishes I love to eat!

Fresh, always homemade from scratch, the whole family always involved.

Oatmeal Dried Fruit Cookies
This recipe is wonderful! Mine came out perfectly moist and delicious and the dough was not at all hard to work with.

The Best Double Chocolate Chip Cookie
Wow I cannot believe some of the reviews I have read - did anyone try the original before modifying? All the comments about too sweet - they are double chocolate cookies- ummmmm sweet is a given! It's terrible when people modify before tasting the original. These were perfect double chocolate decadent cookies - the way they were meant to be. Everyone who has tasted these from this recipe is thrilled and asks for more!

Old Fashioned Onion Rings
The recipe as it is written is a very good basic recipe. It's all about knowing what you are doing..... a deep fryer for this type of recipe is always best, but a good deep pot, with the proper oil temperature will work just fine as well! I personally prefer panko, but done correctly regular bread crumbs work just fine! I did find the batter to be a bit thick, so kept adding milk until it was smoother. Draining the batter is essential as too much will, indeed, soak up too much oil and become soggy. I added some cajun seasoning into the dry flour mixture, and ultimately the batter; just enough to give the rings a nice after bite on the spice but not overwhelm on the flavor. This recipe calls for only one onion, I use 2 medium sweet onions and had batter left over. I enjoyed this very much - this is the best onion ring recipe I have found to date! Get creative and add your own twist if that's what you want - it's what cooking is all about! Happy eating!!!
