Simple BBQ Ribs

YUMMY! These came out so tender and flavorful! Only difference was I put a whole bottle of bbq sauce because we are moving and I would have had to throw it away if I didn't use it. Will do this one again!

Tangy Slow Cooker Pork Roast

Even doubling the spice mixture after reading previews reviews didn't do the trick for this recipe. If we try it again, we'll use a fattier piece of meat to add to the flavor. Advice for this one would be to make sure to puncture the meat thoroughly so that the liquid can help tenderize the meat. At 6hrs the meat was still tough, so I cut it into smaller pieces and turned it on high for another hour. This did help some.

Slow Cooker Thai Peanut Pork

Based upon prior reviews, I doubled the red pepper flakes, added the red bell peppers towards the end and only cooked for 6hrs. I tasted this at 5hrs and realized that the meat didn't seem to have 'much' flavor so I added a bit more teriyaki sauce. I realized at the end of the 6hrs that I didn't have creamy peanut butter, only crunchy. It actually worked out great by adding the peanuts as the peanut butter melted into the sauce. The changes made this a wonderful dish. We served it over teriyaki noodles and will be making this one again.

Slow Cooker Texas Pulled Pork

Made this exactly as listed except I didn't have the Apple Cider Vinegar, so we used Balsamic vinegar instead. This was delish!!! It was so juicy, so flavorful that we will be making this one again and again!!!

Slow Cooker Carnitas

Tasted this at 10hrs when shredded and there wasn't enough flavor from the spices. I doubled all but the cinnamon based on other reviews and ended up adding a pkg of taco seasoning and letting it simmer for another hour. That made a world of difference!

Fresh Southern Peach Cobbler

Made this exactly as the recipe called for and it was one of the most amazingly delicious peach cobblers I've every had! We had just went to a local farm and had about 15lbs of peaches - it was just what we needed to use up a bundle :) This is going into the recipe box for life!

Slow Cooker Pulled Pork

This was AMAZING!!! Just finished eating, BF had two sandwiches and I'm having leftovers tomorrow for lunch. I did use 20oz of Root Beer just to make sure the pork was covered completely, then cooked for 6hrs, drained and shredded, returned to crockpot with Kansas style smokey BBQ sauce for one more hour. So tender, so juicy, so delicious!!!! For those that said it was too sweet - they had to have used sweet BBQ sauce - because you can't taste the sweetness of the Root Beer after you've drained it and cooked in BBQ sauce.

Cheesy Chicken Meatballs

Mexican Style Shredded Pork

Only change we made was to add about a 1/2 cup of green taco sauce to the crockpot - giving it a little more liquid and a little more flavor. Next time will quick up the spice factor with a hot habanero sauce. Served over a Spanish rice, topped with guacamole, sour cream, and shredded fiesta cheese. Scooped up with tortilla chips - YUMMY! Will definitely go into our dinner rotation.

We loved it! I do agree with a previous rater that suggested cooking the pork steaks and starting the mushrooms and onions at the same time. Since i took the suggestion of making french fries, I stuck the pork steaks into the oven once those were done in order to keep them warm while the gravy thickened up. This will be going into our rotation as well.

Chicken Enchiladas I

The only change I made was replaced the water/tomato sauce with 1/2 cup thick salsa as suggested by a couple of other reviewers. This was a simple recipe and was absolutely delicious (even though I inadvertently put the taco sauce in with the other ingredients ... oops). Will be saving this one as a favorite and making many more times. :)

Blackened Salmon Fillets

Well - tonight we had the fire department over for dinner . The minute we put the salmon in the skillet, it smoked so badly that the entire apartment was blanketed in smoke within seconds. Unfortunately, it made us cough so badly, it burned our eyes, nose, and throats. So word of advice - don't cook this in a small kitchen - make sure the kitchen is well ventilated. The taste was AMAZING!!!!!

Blackened Tilapia with Secret Hobo Spices

Another quick and yummy meal ... the spice mix makes the Tilapia taste extremely good. And as the recipe was written - we didn't underestimate the bread. The juice from cooking was a wonderful addition to moisten up the bread and add another layer of flavor to the dish.
