Low Fat Full Flavor Cream of Broccoli Soup

I made this last night although I did make some changes so the rating is for my version. Based on some of the comments, I cut the amount of leeks in half and found that two was plenty. I used fat-free half & half in place of the evaporated milk in the hopes that it would make the broth thicher. It did not so the next time I make it, I plan to add flour to the butter & leeks while they cook. I also added 4 oz. of 2% Velveeta just for an added depth of flavor. I added that just before I took the soup pot off the burner - I cooked it in just until it melted. All in all, this was a fast, easy recipe that I will use again.

Cucumber Salad

I don't feel like I can give this recipe 5 stars since I made some changes, but the base was a great starting point. I substituted plain fat-free Greek yogurt in place of the vanilla yogurt, 1 tsp onion powder instead of the diced onion, and 1 tsp garlic salt in place of the minced garlic. Lastly I added just under 1 tbs of sugar to cut down on some of the sourness of the Greek yogurt. I chopped the cucumbers and made the dressing the night before my potluck, but I kept the dressing in a separate bowl in an effort to avoid soggy cucumber slices. The next morning, I mixed everything together and by lunchtime the flavors had all come together without any sogginess. Very good & will make again.

Apple Bread

I am only giving this 4 starts since I made changes and don't feel qualified to judge the recipe as it was originally written. I substituted unsweetened applesauce for the oil and I used half white sugar and half brown, as opposed to using all white. Also, I do not eat nuts so I used golden raisins instead. I did not find the batter to be too thick, but I do not know if that was due to the applesauce. Either way, the bread was delicious! I will definitely make it again..in fact I am making more tomorrow since I have tons of apples left over from a recent trip to the cider mill. FYI - I'm not sure about the original, but my version is 3 WW+ points per serving.

BLT Dip

I made this dip for my Bunco club and it was a big hit! I served it with Club crackers, garlic pita chips and plain bagel chips. The bagel chips were similar enough to toast rounds that it gave the dip more of a BLT feel. My changes: The "L" in this recipe is supposed to be Leeks, even though this version did not specify that. I added chopped green onion instead. I bought a jar of Hormel real bacon crumbles to save some time and I seeded the tomatoes (I used Roma) so keep the dip from getting mushy. I chilled ovenight. It was so easy and tasty that I will definitely make this again.

Slow Cooker Chicken Stroganoff

This was an great and easy recipe. I did modify it somewhat. I added one can of cream of mushroom soup and a small can of sliced mushrooms, to make it more like a real stroganoff. The results were delicious. The only thing I might change for next time will be to add some milk to thin the sauce out a bit.

Pumpkin Roll II

I don't do a ton of baking, but I wanted something autumn-like for a bake sale that was taking place in October and I stumbled upon this recipe. I was initially hesitant as I had never made a pumpkin roll, but everythi8ng turned out great. The two rolls that I made were a huge hit! I received so many compliments and several people asked me for the recipe. I found this recipe easy to follow. I used greased/floured parchment paper, for the rolling, rather than a towel, and it worked out well enough for me. I made one roll with the nuts and one without. Both rolls tasted equally great.

Artichoke and Sun-Dried Tomato Chicken

I couldn't find any sun-dried tomato pesto so I used about a tablespoon of pesto seasoning instead. I also omitted the green peppers/onions from the diced tomatoes. It was so easy to make and delicous! I will use this recipe again.
