Both having had Gastric Bypass, my husband and I are always looking for tender meat recipes... As my husband said, "This roast is as good as my mother's!" I made some changes to the recipe on the reviews of others. I coated a 3.5 lb roast with flour, salt, pepper, & garlic powder and then seared in a pan of veg. oil. I mixed together 2 cans of Cream of Celery Soup and one packet of Beey Onion Soup mix. In place of the water, I then mixed one can of beef broth in (a little more than the recipe calls for so I could strain out the celery and onion that my husband refuses to even SEE in his food). I threw it all together in the crockpot on low for 8 - 9 hours, adding baby carrots and potatoes for the last hour. It was indeed very tender and the house just smelled wonderful!
