Cucumber Sandwich

Delicious!! I'm just not seeing where people are getting the 79g fat per serving, or that it calls for 2 avacados? I see 33g fat and 1/2 avacado. Maybe it was fixed. But how I figured it out, if you use w/w high fiber bread and fat-free cream cheese, I come up with about a 400 cal sandwich...or about 7 Weight Watcher's points. You could even omit the oil as you already get fat from the avacado. I definatly will make this sandwich again and again!

Surprise Muffins

These were super yummy! Of course I can't leave any recipe alone, so I made a few changes. I had no wheat germ, so I used a package of instant plain oatmeal and a few tablespoons of ground flax seed instead. I also used Smart Balance spread instead of butter to cut back on the cholesterol and fat. I only had soymilk. And I added the zest of 2 lemons and about a 1/4 cup of unsweetened shredded coconut to the batter. I used raspberry jam and had no trouble with the jam bubbling to the surface. When they were done, I drizzled them with a glaze of lemon juice and confectioners sugar. My kids went NUTS! Very good!

Slow Cooker Beef Stroganoff I

I honestly can't think of an easier stroganoff recipe! This was delicious! My mistake was that I didn't trust the recipe and added more water. I put it on before going to bed and thought it would cook down too much by morning. It had more than enough sauce and I will follow the proportions to a tee next time! I also did as one other person suggested and added some McCormick Grill Mates Montreal Steak seasoning. Very good!!

Pumpkin-Apple Muffins with Streusel Topping

Yah, these were GREAT! The whole house smelled all warm and spicy like Thanksgiving!! I shredded the apple and used whole white flour-other than that, no changes or subs. Soooo flavorful and yummy! Were a hit with my husband who "hates" pumpkin.

Sweet Potato Potato Salad

This was phenomenal--really yummy! I was trying to see how I could make potato salad a little more "healthy", and this did it! My husband despises sweet potato, and so I didn't tell him what was in it before he took a bite. He even ate it after I told him what was in it. I also added a small bag of Hormel bacon bits to the salad. To keep it even healthier, I used red potatoes and kept the skins on. VERY GOOD! I will definately make this again! Thanks for the great idea!

Health Nut Blueberry Muffins

So once again, another yummy muffin recipe from the AllRecipes bank! These muffins were so flavorful! I used whole white flour, used 1/2 c ground oats as I didn't have oat flour, and 1/4 c ground flax seed for the wheat germ. Omitted the walnuts, and didn't have a banana so I used a single-serving cup of vanilla yogurt. I also used canned skim milk for the buttermilk. I think the yogurt added some extra moisture, so they took an additional 10 minutes to cook. But they are the best! Can't wait to see what my kids think of them in the morning for breakfast!

Banana Cake VI

I don't know how anyone could say this cake was flavorless or had a banana bread consistancy. It was the MOISTEST, softest, yummiest banana cake I've honestly ever had. I, too, had to cook it for an additional 10 min. as it was still jiggly in the middle. I only had canned milk, but will make the effort to get the buttermilk next time as I think it would be better. I also did not have the lemon juice and just added the bananas to the sugar/butter/egg mixture since they were the almost black bananas and were really soft. Regardless, this cake will be on my list to make often. It was a hit! Thanks for the great recipe!

Smushed Apples and Sweet Potatoes

This is a great way to get the family to eat sweet potatoes! Very yummy! I only had a Corland apple, but it worked great. I also forgot to add the milk, but it came out fantastic all the same. I will definately be making this again!

Antipasto Squares

These got rave reviews at my Thanksgiving potluck! They went like crazy! Didn't change a thing except for chopping the peppers instead of leaving them in strips so they wouldn't come out stringy when you took a bite. Great flavor and lots of people asked for the recipe!!

Apple Crisp II

This was really yummy! I love that the apples have the syrup in them. The only changes I made were to add the vanilla to the syrup mixture AFER it had thickened before pouring it on the fruit. Then I doubled the whole recipe to fill the 9x13" pan since others had said it was too thin for that big a pan. I wouldn't change a thing...sooooo good. We can't wait to eat it for breakfast! Made this again for the folks at work-added a few handfuls of frozen blueberries to the top of the fruit before topping with oatmeal mixture. Went over huge-not one bit left by lunchtime. Really the best apple crisp recipe I've ever had!

Pina Colada Cake III

This was soooo good! A huge hit at work-the plate was gone in less than 2 hours-and that was at 7 in the morning! I took the advice of others and used half the amount of rum and used pineapple juice as the other half. The flavor was GREAT, the cake was moist, just delicious!

Chicken Chili II

This chili is PHENOMENAL!! I was hesitant to cook the chicken as long as the recipe said for fear of it drying out. So I cooked all the veggies until soft, then added the diced chicken and spices to cook for a few minutes before adding the liquid. Regardless, this was a very yummy recipe which got rave reviews when a bowl was brought to a very picky friend! I did use the cornmeal to thicken it, as well.

Sweet Potato Bread I

Yah, so this recipe is pretty much awesome! I did sub Splenda for the sugar, and instead of nuts I used Craisins. I also subbed half of the flour with whole wheat. I just threw 2 small sweet potatoes into the microwave, peeled and mashed them-super easy! I made them in muffin tins and the kids gobbled them up! Great taste, tender and moist! Definately will make again! Thanks for the recipe!

Newport Clam Chowder

Oh this chowder was so good! I'm from Maine, so no traditional chowder from my neck of the woods has celery and carrots in it like many of the recipes on here. Gah.... I subbed a few ingredients, as I only had bottled clam juice and canned chopped clams. I also only had light cream instead of half and half. But the consistancy was SO good! Thick, creamy and reminded me of canned clam chowder but without the nasty canned soup taste, of course! Oh, and I used bacon grease in place of butter. A+

Pumpkin Casserole

This is super yummy! Only thing I did differently was use skim milk because I was out of canned and I also added a sprinkling of nutmeg. Tasted like a pumpkin pie, but the texture was fluffier and lighter. Very good, but I'll probably cut back on the sugar next time.

Chickpea Soup I

I really love this soup and have given the recipe to several friends. Like the suggestion said, I use veggie boullion to keep it vegetarian. I pretty much make it as the recipe says, though I was a little confused that the ingredient list called for mixed veggies while the directions said to add green beens. I used the green beans anyway and it came out awesome! Very wholesome. Though I had to fib and tell my kids the sweet potatoes were carrots so they would eat it!

Pumpkin Pie Bread

I LOVED this bread! I did do a few modifications, though. For starters, I used 100% whole WHITE flour-I tell you, this is a great way to get extra fiber into your cooking and, I swear, your family won't even notice! Second, didn't have pumpkin pie spice so I used 2 teas. cinnamon and 1/2 teas. ginger. I thought that 3 cups of sugar was WAAAY over the top, so I used 1 3/4 cups white sugar and 1/4 cup of molassas. I also cut the oil to 1/3 cup oil, 1/3 cup Smart Balance butter spread, and 1/3 cup plain nonfat yogurt. This bread was phenomenal!! Moist, moist, and did I say moist?? I made a cream cheese frosting for it, and having made half of the recipe into muffins, it was the top request for my kid's school snacks that week. I will be keeping this recipe in my recipe box and making it often!!

Fragrant Chicken Curry

This is a phenomenal recipe! I didn't have cloves, and instead of using the rotisserie chicken meat I followed the recipe exactly up until adding the chicken. I let chunks of raw chicken thighs simmer in the sauce until they were done. I also only had regular coconut milk (which I saw was quite fattening!) I found the sauce to be a little soupy for my taste, so I drained it into a saucepan and let it reduce for a while before adding the chicken and onions back in. Served it over Jasmine rice with green beans on the side. Hubby called from work just to say the curry was "bad a**"!

Cheddar Buttermilk Biscuits

These were sooooo delicious! I did sift the 2 cups of flour, used reduced-fat sharp cheddar, omitted the cayenne and used 1 tsp. of garlic powder. After baking I brushed the tops with melted butter and an additional sprinkling of garlic and salt to the top. Light, fluffy-my first success at homemade biscuits. TO DIE FOR!!
