Awesome and Easy Creamy Corn Casserole

This was super yummy! I left the store completely forgetting sour cream, but when I got home I found some vanilla low-fat yogurt and used that instead. It still didn't come out too sweet. It was super creamy and had a great corn flavor. I think this would be great with ham! Will definately make again, but use the sour cream like the original recipe is written as.

Pumpkin Casserole

This is super yummy! Only thing I did differently was use skim milk because I was out of canned and I also added a sprinkling of nutmeg. Tasted like a pumpkin pie, but the texture was fluffier and lighter. Very good, but I'll probably cut back on the sugar next time.

Never Bitter Lemonade

So good! Did the recipe exactly as instructed and it was amazing! Not too sweet or tart and refreshing! I do want to try it with Stevia though for a lower calorie drink.

Chip Chicken Lollipops

These were pretty good, but I seem to agree with others when I say they were a little bland. I even seasoned the egg/milk mixture with salt, pepper and onion powder first and used sour cream and onion chips. I also think the oven maybe could be higher, because the chips weren't really that crispy. Had I cooked them longer, I would have overcooked the chicken as the tenders I used were juicy and perfect!

Cheddar Buttermilk Biscuits

These were sooooo delicious! I did sift the 2 cups of flour, used reduced-fat sharp cheddar, omitted the cayenne and used 1 tsp. of garlic powder. After baking I brushed the tops with melted butter and an additional sprinkling of garlic and salt to the top. Light, fluffy-my first success at homemade biscuits. TO DIE FOR!!

Brown Sugar Meatloaf

This was a really yummy meatloaf and popular with my kids due to the sweetness. I did use turkey burger, as we don't buy hamburger often, and subbed crushed Wheat Chex for the saltines to sneak in a little fiber. Really great!

Chocolate Chocolate Chip Cookies II

Not sure if it's the recipes or me, but I didn't find these cookies to be sweet enough! My husband came home and tried these and said 'did you put all the sugar you were supposed to in these?' I'll have to try these again and see if they come out differently. Other then that, great texture and good chocolate flavor. USE REAL BUTTER!!!

Ham and Beans

These beans are just delicious!! I made them with leftover Easter ham. I was very happy to have read the recommendations regarding the brown sugar-I only added 2 tablespoons and this was plenty! I also added a big squirt of ketchup for acid to help soften the beans. Didn't add the cayenne and parsley either. These were so yummy!!

Favorite Peanut Butter Cookies

This is a great basic peanut butter cookie recipe! My only change was that I am a huge fan of vanilla, and I added 2 teaspoons. I also agree with the 10 minutes of baking time. Chewy, soft cookies!! YUM!

Wicked Garlic Tofu Saute

This recipe was only ok. I don't know how people rated it so high. I used even more oyster sauce then what was in the recipe, and it still lacked flavor. I ended up adding some chili garlic sauce to add some kick to it. I was suprised, because I LOVE tofu. Too bad...

Beans, Greens and Garlic Soup

This was a very yummy soup--filling and comforting on this chilly, fall night. My only changes was that I didn't drain the beans because I like the thickness the liquid gives the soup. I also didn't have ditalini, so I broke up angelhair pasta. I always think beans can be a little tough, especially when they are canned, so I added a healthy squirt of ketchup to the water with the beans and pasta. Really good!

Pina Colada Muffins

These were very nice. I made them for the kids, so used vanilla instead of rum extract. Very moist, the kids liked them. My only critique is that they really should be called cupcakes...too much sugar and there's really no nutritional value-just yummyness!!

Pina Colada Cake III

This was soooo good! A huge hit at work-the plate was gone in less than 2 hours-and that was at 7 in the morning! I took the advice of others and used half the amount of rum and used pineapple juice as the other half. The flavor was GREAT, the cake was moist, just delicious!

Apple Crisp II

This was really yummy! I love that the apples have the syrup in them. The only changes I made were to add the vanilla to the syrup mixture AFER it had thickened before pouring it on the fruit. Then I doubled the whole recipe to fill the 9x13" pan since others had said it was too thin for that big a pan. I wouldn't change a thing...sooooo good. We can't wait to eat it for breakfast! Made this again for the folks at work-added a few handfuls of frozen blueberries to the top of the fruit before topping with oatmeal mixture. Went over huge-not one bit left by lunchtime. Really the best apple crisp recipe I've ever had!

Corn Fritters Canadian Style

Can't say as though I'm thrilled with this recipe--I even added 2 tbs sugar to the batter. Gotta agree with fellow reviewers when I say they were rather tasteless-even with maple syrup. Maybe they'll be better after sitting in the fridge overnight. Maybe with some chopped chilies added or some extra spices they'd be a little more exciting. But the kids loved them, if that means anything!!

Fragrant Chicken Curry

This is a phenomenal recipe! I didn't have cloves, and instead of using the rotisserie chicken meat I followed the recipe exactly up until adding the chicken. I let chunks of raw chicken thighs simmer in the sauce until they were done. I also only had regular coconut milk (which I saw was quite fattening!) I found the sauce to be a little soupy for my taste, so I drained it into a saucepan and let it reduce for a while before adding the chicken and onions back in. Served it over Jasmine rice with green beans on the side. Hubby called from work just to say the curry was "bad a**"!
