Pumpkin Fudge
First time making fudge ever and this turned out great! My fudge boiled well before the soft ball stage on my thermometer (boiled at around 225) so I went with the instructions. I found this to be almost painfully sweet, but I don't normally eat fudge. The pumpkin flavor is awesome, and I might add more cinnamon next time. It helped to have everything measured out and ready to pour. Next time I will stir everything before even adding to the pot, or use a whisk. It also took longer than expected to get the white chocolate to melt. I sprayed the foil and the fudge came out easily. Overall a great recipe for a first attempt at a new method.

Pumpkin Pancakes
All I changed ingredients-wise was replace all of the allspice with cinnamon (don't have any allspice right now). So in terms of texture these are freakin amazing!! I found them to be super fluffy which I like, but everyone else seems to say that they are dense. I sifted the flour, for no real reason, and just per my usual method of making pancake batter I mix until there are small lumps, let it sit for a few minutes, then gently mix again to break up the lumps. This seems to get everything incorporated nicely without overmixing and makes for a light and airy batter. Oh and they taste amazing as well.

Easy Granola Bars
I've made this as written and was good but I thought there was a lot of chocolate. Here's my current combo of ingredients: 2.5c oats, 1/2c rice krispies cereal, 1/2c. each of peanuts and sunflower seeds, 1c of cranberries, 1/2c. of white chocolate chips, and then the condensed milk. I didn't feel like melting butter on the stove because I don't have a microwave so I omitted it and it turned out SOOO good. If you make these as individual portions like a cookie you should use those ice cream scoops people use to portion out cookie dough and bake for 10-15 min. I baked them for 20 this way and they were slightly overdone but still tasty.
