Penne with Sausage and Broccoli Rabe

It's been a long time since I've done a review and this recipe is great and has good potential. As is, I would give the recipe 4 stars according to my tastes, but it can be easily changed to get 5. I modified my version also; I used one small packet of crushed peppers because that was all I had on hand and it turned out to be a perfect amount of heat. I also used tofurky italian tomato & basil faux sausage as I'm vegetarian. This was good, but I would probably use a different flavor next time, and this has no bearing on my rating, just personal tastes. One change that I think helped a lot was to add about half a cup of some of my own homemade marinara sauce, just to keep everything moist and add a little bit of flavor. Finally, I used a 14 oz. box of whole wheat penne and probably could have been just fine using about 2/3 of a box. Before this I had never had broccoli rabe/rapini and I'm glad it came in my CSA box, it and this recipe are very good, will definitely make again!

Fluffy Pancakes

I love this recipe. My pancakes (using baking mixes or even pancake mixes) always used to come out dense and stiff. These are so much better and not much more complicated than using a premade mix. And again I say, sooo much better. I will keep this recipe and toss out all others.

The Best Banana Bread

This is a great and simple recipe. I did modify it somewhat, as others suggested: added 1 tsp of Vanilla extract, some cinnamon, nutmeg, and allspice, substituted half the flour with oatmeal, and stirred in some slivered almonds. I also used a cupcake tin and baked them at 325 in my convection oven for 30 minutes. They came out great and I will definitely be using this recipe again.

Sesame Chicken

I did tweak this recipe a little, like others have. I made more sauce, but just eyeballed it, I breaded and fried the chicken first, then I left out mushrooms but added broccoli. Unfortunately I slightly overtoasted the sesame seeds, but overall this recipe still turned out great. Even my husband who isn't a big fan of Asian style foods (unless it's from a popular chain store) liked it. Will definitely make again.

Easy Key Lime Pie I

This pie turned out great. I loved it and took one to work and everyone there loved it, even my boss who is one of those who loves authentic florida key lime pies. Highly recommend this recipe.

Artichoke Chicken

This was so-so to me. I was surprised because it sounded really good. It certainly may be an individual thing, because I don't like alot of mayonnaise, and the artichokes were still a bit too briny. Maybe with some adjustments it would be better, but I just didn't care for it as much as I'd hoped.

Easy Cheesy Skillet Chicken

This was good, although I did modify it. I used a shredded cheddar/white cheese mix and added rice into the mixture, although it could have easily been cooked separately then topped with the chicken. Overall a good recipe.

Pasta e Fagioli I

I liked this recipe alot, I did modify it a bit though. I used regular white beans instead and added cooked ground sirloin to make it closer to a popular chain restaurant's version. It turned out great, husband and I both liked it alot.

Cottage Cheese Chicken Enchiladas

These were really good. My husband was wary about the cottage cheese, but we both ended up liking it alot. The only reason why I didn't give it five stars were because I have fairly high standards and something has to be spectacular before I'll do that :) However, these were definitely good and I will be making them again.

Awesome Broccoli Casserole

Not a bad dish, but I would definitely follow the other posters' advice and pre-cook the broccoli. I didn't care for it being crunchy. Next time I will probably also mix more of the stuffing in the actual broccoli mix and put less of it on top. It was just too crumby that way. Oh, and definitely more cheese in the broccoli mixture. But worth a second try for sure.

Pecan Pie

Very good! My first time baking pecan pie (or much of anything for that matter) I took it to work and everyone liked it alot. I was VERY pleased, as I am a big pecan pie lover. I just made two more to take to family Christmas dinners, and I'm sure they'll have a good turn out there too. The only thing I would change would be the pie crust... I used the kind that you just unfold into the pan, and it is good enough, but does get a little overcooked, but doesn't taste bad. I've heard others mention that they put foil over the edges, so I may try that next time. Overall, a GREAT recipe.
