White Bean Soup

Reviewed: May 16, 2012
5 of the 6 in my family loved this. Rarely gets better than that!! Nice switch from chili...nearly all different ingredients, but still a nice, hearty soup. Since some of my family don't like tomatoes, I used a small can of tomato sauce.

Texas Sheet Cake V

Reviewed: Oct. 31, 2011
This is my favorite sheet cake recipe. You can change it... To make a white sheet cake: delete the cocoa and add 1 tsp almond extract to the cake and 1/2 to 1 tsp almond extract to the frosting. To make a peanut butter sheet cake: add 2/3 c. peanut butter to the cake batter (cook with the butter) and 2/3 c. creamy peanut butter to the frosting. You can reduce the amount of powdered sugar. Today I made the peanut butter sheet cake and only used 2.5 cups of powdered sugar instead of 4.5 cups.

Paella

Reviewed: Jan. 24, 2010
All four of my kids liked it!!! How often does that happen? I made it in my electric skillet. The only change I made was to use a package of yellow rice (with Saffron in it).

Raspberry Lemonade Biscotti

Reviewed: Aug. 20, 2009
I took others advice and doubled the lemon zest to 4t. (When I make it again I'll add another teaspoon.) And, because I'm lazy and cheap I just used 3/4 cup of some cherry berry preserves I had on hand. YUM!! The texture is slightly different than your standard biscotti, but it still great.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Nov. 8, 2008
Oh! My! Yum! I made this in a exactly as stated. I cooked it in a stone dish. The only thing I would caution is be sure of the size of your bird. My chicken was smller so only needed to be cooked about 4 hours. Once you've made this you may never buy a store made rotisserie chicken again! I bought several chickens, cooked one and froze he rest - already cleaned, seasoned and ready to go in the oven. Put it in the oven before church, come home to a prepared lunch!

Cream of Fresh Asparagus Soup II

Reviewed: Oct. 30, 2007
Very good. The sour cream and lemon at serving are a nice touch. It received good reviews at a recent potluck. Be sure to remove the big ends of the asparagus. If the ends are too tough they leave strings (like celery strings) in the soup.

Orange Gelatin Salad

Reviewed: Mar. 13, 2007
I usually make this without the pineapple. Then my husband, who won't eat anything with cottage cheese in it, will even eat it. Yummy and easy. Use light cottage cheese and cool whip.

Horseradish Gelatin Salad

Reviewed: Mar. 13, 2007
I like jello salads and was looking for something different. I thought it sounded a little odd, but with the good reviews decided to give it a chance. Not good!!! The mayo flavor is too strong and the horseradish is just plain gross. It was not even good enough to suffer through. I ate one serving and threw it out. And I won't even tell you what my husband and children said about it ;-) Unless you're actually looking for this recipe, don't try it!!

Raw Vegetable Salad

Reviewed: Feb. 24, 2007
My husband raved about this recipe. I made it as listed. I buy the pre-cooked and crumbled bacon bits that are in the salad dressing aisle. My picky brother-in-law said, "I shouldn't like it, but it is great!"

Peanut Butter Chocolate Chip Cookies from Heaven

Reviewed: Feb. 6, 2007
My 9 and 7 year old daughters made these. My 9 year old says, "These are definitely heavenly!!" These are one of the few cookies I've had where the cookie tastes better than the raw dough.

Chicken Stew with Dumplings

Reviewed: Nov. 24, 2006
YUM! I used about 2 cups of pre-cooked, frozen, diced chicken breasts that I keep on hand for recipes just like this. And I used 32 oz of Chicken Stock and then about another 16 oz of chicken broth because that is what I had on hand. It turns it into a quick meal.

Asian Pasta Salad with Beef, Broccoli and Bean Sprouts

Reviewed: Oct. 9, 2006
This salad is nice if you're looking for a different taste from the usual. I followed the recipe except used medium sized rice noodles from the international aisle of the grocery store and blanched the broccoli in the boiling water at the last minute (both as recommended below). YUM!

Zucchini and Pecan Saute

Reviewed: Aug. 24, 2005
Adding nuts to a squash saute is a great idea. I like more flavor though, so I added 1/4 c. red onion, 1TBSP minced garlic, 1 tsp Italian Seasonings, 1 tsp salt, 1/4 tsp pepper, and 3/4 tsp mild curry. I used my electric fry pan at 300 degrees.

Baked Teriyaki Chicken

Reviewed: Mar. 20, 2005
This is a great recipe. I split the sugar into half brown and half white sugar like someone else. It was so good I made up more teriyaki sauce, bought chicken when it was on sale, and froze the chicken in the teriyaki sauce so it would marinate as it froze and thawed. Then I cook in the crockpot on low for most of the day. I like the chicken so tender it falls apart. Cooking in the crockpot eliminates all the mess others have talked about. And since you cook the chicken right in/with the teriyaki, you have the hot teriyaki sauce to serve with the chicken.

Honey Mustard Beer Brats

Reviewed: Feb. 26, 2005
My husband said these are the best brats he's ever had. However, my girls (who love brats) think they are too spicy. If you take meals to people (ex. new moms) this is great. You can take it over anytime during the day and it can continue to cook. Then both families can eat at their own convenience.

Slow Cooker Adobo Chicken

Reviewed: Feb. 15, 2004
This was great! I cooked it on high almost all day, then deboned and shredded, and then put back into crockpot for an hour or so til dinner. I served this to 4 children and all asked for seconds!! I don't like to cut onions so used 3/4 cup of frozen diced onions. I will use this as a once a month cooking recipe...or make double and freeze the left overs.

Cinnamon Rolls II

Reviewed: Dec. 14, 2002
I have had great luck freezing before raising or baking. Then, when I am ready to eat them, I put them in the oven on warm to thaw and rise. When they have risen enough I bake as usual. They're wonderful.

Stephen's Chocolate Chip Cookies

EXCELLENT! All my friends ask for this recipe. I make large batches, make the cookie balls, flash freeze them and store them in a zip loc bag to bake a few at a time at a later date.
