Strawberry Spinach Salad I

Very tasty! I substituted white balsamic for the regular vinegar, toasted the almonds, and added some feta cheese to offset the sweetness of the dressing. I've done a variation using mandarin oranges in place of the strawberries - both ways are great.

Marinated Flank Steak

Awesome flavor! This is my go-to recipe when we have guests to feed. I sometimes use lime juice instead of lemon, and always start the marinade the night before. Longer is definitely better.

Easy Roasted Red Pepper Hummus

Very tasty and so easy to make. I reserved some of the liquid from the drained beans and added it to make a more creamy texture. Using fresh squeezed lemon juice makes a huge difference.

Fresh Ginger Cookies

So very delicious! I upped the grated ginger to 3 TBS and added about a quarter cup of finely chopped candied ginger (use a bit of sugar from the recipe for chopping in the food processor). For the ginger "trifecta", I added powdered ginger to the sugar used for rolling the balls before baking. I love the chewy texture and the zing from the ginger and molasses. This one's a keeper!

Triple Berry Crisp

Delicious! I've made this twice; the first time with three different berries; the next was all blackberries. I prefer the one-berry version, and while the recipe does call for a lot of butter, it absolutely makes a difference. I served it warm with ice cream - yummmmm....

Party Punch V

Very refreshing and not too sweet! I made this punch for my in-law's 50th anniversary party and it was very popular - quite a few guests came back for refills, even though other beverages were available. I floated orange slices in the bowl for a pretty presentation.

Mom's Best Peanut Brittle

This recipe was great, except for the butter... This had the taste and texture of toffee more than what I consider true peanut brittle. My daughter loved it, though.

Cheese Fondue

This was fantastic! I rubbed the pot with garlic before heating the wine, and I omitted the salt entirely. The trick to prevent clumping is to toss the flour with the grated cheese, and add it to the wine in very small amounts, keeping the heat low and constant. The result was perfect! We prefer to use apples and cocktail sausages as dippers, instead of bread. Yummmmm.....

Restaurant-Quality Baked Potato Soup

Good soup, but the onion flavor was a bit overpowering for my taste - next time I'll use half as much and add a clove of garlic. Didn't use cornstarch at all, and it was plenty thick.

Lime Gelatin Salad I

I've been searching all my cookbooks for this recipe - my grandmother always made this for holiday meals, and I'm so happy to have found it! I found that the gelatin sets up too firmly if left for an hour - 1/2 hour is adequate. Also, I used only a little more than half of the whipping cream and it turned out fine. Molds beautifully!

Banana Nut Bread II

Very easy recipe and delicious results! I did not premix the batter - just added the ingredients to the machine starting with the liquids, and it turned out just fine. I added a teaspoon of cinnamon and 1/2 c of frozen bluberries to jazz it up a bit, and the family loved it. Like any quick bread, it becomes more moist and easier to slice the next day. I will definitely make this again.

Barbecued Beef

So easy and delicious - the meat was tender and the sauce perfect! I followed the suggestion of making a second batch of sauce - the original cooking sauce was much too greasy for me. I simmered it on the stove about 15 minutes to thicken, before adding it back to the crockpot with the shredded beef. Next time I will try this with a pork roast - yummmmmm!

Baked Chicken and Stuffing

My mother-in-law made this dish first, and it was extremely salty. I altered the recipe by using unseasoned chicken (cooked in plain water) and by using water in place of the chicken broth, and used cheddar cheese instead of mozzarella. This cut way down on the salty taste. Next time I will either cover the baking dish, or perhaps layer the soups over the top of the stuffing to keep it moist. We all enjoyed this very much!

Easy Chicken Rice Casserole

I've made this dish twice. The first time, I followed the recipe, and found that as written, it was much too bland for my taste. I made it again tonight, with the following modifications: Instead of 1 tsp season salt, I used 2 teaspoons of McCormick roast chicken seasoning, plus about 1/2 teaspoon each of dill and thyme. I also added a good dose of fresh ground pepper, and used 1 can each of cream of chicken and cream of mushroom soup. Much more flavorful the second time around - my family loved it. Great basic recipe!
