Jamaican Me Crazy Chili

I'm not sure how fantastic the recipe is as written, lol...because I made a few tweaks from the first time. In making this as a healthy low fat meal with lots of flavor, I made the following changes: - Used ground chicken as the meat - Eliminated all oil in cooking - Used Chipotle Chile Powder instead of the paprika, adjusting amount to accomodate spiciness - Doubled most of the other spices - Added a little thyme - Eliminated the sugar I served with low fat whole wheat corn muffins. This was absolutely fantastic and the diet-conscious folks at work I make it for are in love with it. Excellent base recipe!

Strawberry Margarita Cake

Sorry...did not care for this cake. The flavor of the Strawberry Margarita mix just was not great with the cake. And the cake mix was not altered enough to not TASTE like a boxed mix. The coolwhip as a frosting didn't go well either. Won't be making this one again. If I get the urge for a Strawberry-Lime type cake, I'll make a real Strawberry layer cake and put lime curd between the layers.

Oregon Salmon Patties

These are yummy! There's NO need to add the liquid from the can...if you add any extra liquid at all, chose something with more flavor (a splash of dry sherry, clam juice, or lemon juice). Add some of your fave seafood seasoning (i.e. Old Bay) to the mix for extra zing. Is excellent with Hollandaise Sauce and sprinkled with a bit of fresh dill.

Pizza Pinwheels

Banana Sour Cream Bread

I used brown sugar and all whole wheat flour with a bit of flax seed meal and wheat gluten added. The flavor was fantastic, and the texture was marvelous! Everyone LOVED it!

Festive Onions

Absolutely yummy! I added a bit of fresh nutmeg to mine. This is basically a crustless onion quiche, and it is SO flavorful! Be sure to drain all of the butter/oil off of the cooked onions before adding them to the cream mixture. Sprinkle sweet paprika and dried parsley over the top for lovely color.

Prosciutto Wrapped Asparagus

I gave this recipe only 4 stars because, as written, it's not as good as it could be. The amounts of prosciutto and neufchatel cheese called for are WAY too much. For a bundle of 4 asparagus spears, it's best to use one paper-thin (as thin as you can get it) slice of prosciutto, spread with about a tablespoon of neufchatel. The smokey and saltiness of the prosciutto soaks into the cheese and asparagus while baking. Also, be sure to brush each bundle completely with a bit of olive oil, to keep everything moist. These would be lovely served on a ring of blanched red sweet pepper. Try it with smoked salmon too!

Chicken Pot Pie VI

Oh, this is just FABULOUS!! I used a sheet of pie crust for the bottom, and a sheet of puff pastry dough for the top, which I sprinkled with a little Parmesan and nutmeg. I added a splash of dry white wine to the filling as well. And I used a can of Vegall instead of frozen veggies. Just downright sinfully yummy!

Susan's Butter Cake

*THUD!* This was FABULOUS! Be sure to beat it well, don't let it fall, etc. I substituted butter flavoring for most of the vanilla extract. Let it cool, but don't let it sit overnight before depanning. Try it with chocolate shavings over the top!

Chicken or Turkey Tetrazzini Deluxe

This was great! And it made a LOT! I used leftover turkey. I did double the cheddar cheese. I also used whole wheat wide egg noodles for the pasta, which worked really well. I added extra garlic powder and just a hint of cayenne to the mix, cuz it was a tad bland, to me. I used red pepper instead of green, and I think that worked really well.

Creamy Dill Cucumber Toasties

First,definitely use toasted slices of cocktail bread-rye or pumpernickel.2nd, don't use mayo,it just doesn't go well with the cream cheese.I suggest sour cream. 3rd, add the dry dressing mix a little at a time, and taste...until it's to your liking. Using a whole packet is way too much! Half would be better. Dry or fresh dill, either works well. I'll make this again with the above changes. The recipe, as is, is just much too strong and salty and greasy, and the bread does nothing for it.

House Fried Rice

I used cold leftover brown rice that I "fried" in a cast iron skillet before adding the other ingredients. I added bean sprouts to the vegetable/ham mixture for the last 5 minutes of cooking, and an extra egg. This was really great fried rice! And with brown rice...sooo good for you. The only downside is that it was a little time-taking because of chopping all the vegetables. But definitely worth it!

Garlic Green Beans

I followed the directions except I used a 16 oz bag of frozen green beans that I cooked and drained first, and only used half a bulb of garlic. This is a super side dish and would be great even without the cheese!

Broiled Salmon with Corn Relish

I made this with grits flavored with a little cream cheese, milk, tabasco and Parmesan cheese (I much prefer the consistency of thick grits to that of Polenta and grits are fabulous with salmon!). The flavor combinations made this one of my favorite meals. The salmon was awesome and the corn relish added a delicious topping that really made the meal! Superb! Tip: If you don't like to eat the salmon skin, leave it on for the cooking because it helps keep the fish tender. It just peels right off after cooking. Kosher salt and fresh cracked pepper on the fish is much better than regular salt and pepper. Cajun seasoning would also be really good on the fish.
