Southern Fried Chicken

Unbelievably good. I also soaked the pieces in salted ice water, my grandmother told me that trick long ago. I soaked thighs and drumsticks only for about an hour. The key to getting the flour to stick is to let the chicken sit for a little while before you fry it. And also, double dip the pieces. Shake them once in a large plastic bag, and let them sit for about a half hour. The flour coating will look like it's almost being absorbed by the chicken skin. Then right before you put the chicken pieces into the hot oil, dip or shake them again. VERY crispy and delicious. Husband didn't even stop eating to comment, he just tackled the drumsticks then moved on to the thighs. I cooked six pieces and managed to snag one thigh. I think that is a resounding endorsement.

Restaurant-Style Coleslaw I

I have 3 or 4 coleslaw recipes that I switch back and forth between, but this is by far the most delicious and the new favorite. I mixed red cabbage into the green, didn't have white wine vinegar so substituted rice vinegar, and used a red onion and a little bit of shallot. Very very tasty and it didn't last long - probably better to double the recipe next time.

Chicken Breasts Pierre

This was very easy, very yummy and even my husband who is not a big fan of chicken in any form really liked it. I made two substitutions out of necessity-I had to use plain diced tomatoes as I didn't have stewed, and used cider vinegar as I didn't have any white distilled. It was very simple to put together. Great dish to have with pilaf and steamed spinach.

Beef Florentine

This is delicious! The one change I made was out of necessity-I didn't have two 8-oz. cans of tomato sauce, just one, so I used 8 oz. of an Italian Baking Sauce instead and it was fine. I added slightly more water to offset the chunkiness and thickness of the baking sauce. It was very nice and moist, didn't dry out like some pasta casseroles can. My husband had 3rds...and he does NOT like cottage cheese. I don't think he even knew it was one of the ingredients. Thanks for a great dish!

Yellow Squash Casserole

This was excellent. The only additions I made were small fresh bread cubes on the top and then a sprinkling of Creole seasoning. It was rich and filling enough to serve alone with steaks, didn't even need potatoes or rice.

Zucchini Pineapple Loaf

Jamie's Minestrone

This soup is fabulous. I had to use 32 oz. of V8 instead of the tomato sauce as I did not have that in my pantry, and I also added a shot of Worcestershire sauce which added a little depth. It makes a LOT, but my husband ate at least half the pot in one sitting.

Cinnamon-Roasted Almonds

Amish Macaroni Salad

I made this last night and WOW. It is fabulous. I took some to my parents,who spend a lot of time near Chambersburg PA and always came home raving about a macaroni salad they would get at a local deli. Apparently this is a dead ringer for that salad. Thanks so much for posting! Oh, btw, I did not have celery seed so made it without and it still turned out absolutely delicious.

Chicken Salad with Toasted Almonds

This chicken salad is terrific! I made it with pre-cooked Honey Roasted chicken tenders (too hot to cook, even grill), skipped the lemon juice and used red grapes because that was what I had on hand, but those were the only changes I made. My husband, who is not a huge fan of anything chicken, cleaned the bowl. HIGHLY recommended.

Slow Cooker Lentils and Sausage

This is fantastic. I make two changes; I don't drain the tomatoes, and I add a bay leaf or two. It tastes great with some Grade B maple syrup over the top when you serve it.

Cuervo Perfect Margarita

This is the base for the way we make margaritas, but I agree with an earlier review, it's best with one part Cuervo Gold to two parts mix. We also add a splash of orange juice and that takes it up a notch. People who say they don't like tequila love the way my husband makes them.
