Hello, I am a speech languag therapist living in Florida. I have a wonderful husband and three year old daughter. I work full time so making time to cook is sometimes a challenge. I love getting ideas from this site.
My favorite things to cook
Although I am busy, I really love cooking and baking. I just like getting in the kitchen and cooking knowing that my family will appreciate my effort.
My favorite family cooking traditions
Thanksgiving is always at my Mom's house and she does all the cooking- got to LOVE that. Christmas alternates between my Uncle's house (my side of the family) and my mother-in-law in Kansas. I have a Broccoli Cheese casserole that I always make at Christmas time and it is always GONE- fast.
My cooking triumphs
Before we moved Christmas to my Uncle's house, we were still having it at my grandmother's house. She is so wonderful but as time marches on it was getting harder and harder for her to cook for big family get togethers. So, the last three years that we had Christmas at Grandma's I did 99% of the cooking to help alleviate the pressure off Grandma. I really enjoyed blessing her and I loved cooking Christmas dinner for my family.
My cooking tragedies
Oh well, I guess I am human like the rest of you. I have burnt things, put in too much salt, ect. It happens to the best of us :)

Cheesiest Potato Soup
This potato soup is awesome. The only thing i did was double it and leave about 1/4 of the potatoes cubed. Oh yes and probably a little more cheese. It was awesome!

Pork Chops with Dill Pickle Marinade
I was looking for chicken marinades and saw this. I tried this with chicken breasts. It was so yummy. I will definitely try again and also try with pork chops. We always have pickle juice- Claussen. We love pickles!

French Onion Casserole
This was really good. I almost goofed up and put more liquid in because of all the reviews that siad it was dry- almost, but I decided to make it just like the recipe said the first time. THANK GOODNESS, i did. IT was NOT dry. It was PERFECT, moist. I pre-cooked and drained my ground beef. I used minute rice. I used the exact ingrdients in the recipe- it was moist AND tasty. I can not figure out how someone could have made this and thought it was dry and/or bland. It was popping with flavor. I think that the bowl you use is probably important. A 2 quart casserole dish is small, and that is what I used, a round, clear glass one. So that in the center of my casserole the mixture was about three inches high. That could be why mine was moist and delicious. If you use a bigger panm (ex.9 x 13) you would spread it out very thin and it would probably get dry...
