Banana Crumb Muffins
I made these this week and my husband loved them. The next day for breakfast I popped one in the micro for 15 seconds and spread with butter. They are so moist and tender and delicious. Sent some to my neighbor and she raved about them. I did follow other readers advice and added 1 tsp vanilla, 1/2 tsp nutmeg and 3/4 tsp cinnamon. Best banana muffins I've had. I'm making these again this week!!

Balsamic Roasted Pork Loin
I made this recipe last night for my husband and I. I followed the directions except I tweeked it a bit for my taste: 1) I decreased the balsamic vinegar and olive oil to 1/3 cup each; 2) I added 1/4 cup of red wine(zinfandel is what I had on hand; 3) I added about 1/4 cup of water to the resealable bag to get out all the seasonings and oil and squeezed the bag really well into my crockpot; 4) I placed everything in my crockpot and cooked on low for about 8-9 hours. I also microwaved (1) white yukon gold potato and (1) sweet potato(both sliced in quarters) and placed in the crockpot 1 hour before the roast was done. This was probably the best pork loin roast I have had in a long time. It was moist and flavorful and did not have a strong balsamic vinegar taste. My husband is a picky eater and he really enjoyed it. I will definitely make this again.
